I’m not a big fan of fast food restaurants; however, I will make an exception for White Castle. There’s just something about those tiny, little burgers that tantalize my taste buds and send my belly into a trance. Imagine Homer Simpson when he drinks a Duff Beer. Yeah, that’s me at White Castle.

 

I was a little skeptical at this copy cat recipe because, in my experience, recipes like these rarely turn out the way that you want them to. Much to my surprise, White Castle casserole surpassed my expectations. Not only did I absolutely love it, but my husband, kids AND mother-n-law scarfed it down like nobody’s business. My mother-n-law is a very hard woman to please. She was pleased 🙂

If your household is anything like mine, you probably have a boatload of Sloppy Joe lovers on your hands. I, for one, happen to love gnawing on a good old fashioned Sloppy Joe sandwich, but I hate the mess that they make. Have you ever feed a Sloppy Joe to a 3-year old? It’s a tragic occasion on the mess factor.

 

When I can across Sloppy Joe Casserole, my heart skipped a beat, and I did a few backflips through my dining room. Ok, that last part isn’t true, but I did do a little dance! This casserole is uh-mazing, folks. It tastes just like traditional Sloppy Joe sandwiches but doesn’t leave you with messy clumps of tomato sauced meat lying on your kitchen floor. It’s also very easy to make and only consists of 4 ingredients!

Sometimes, you want a big ‘ol plate of Mexican food, but you haven’t the energy to whip up authentic tortillas, salsa, and refried beans. Plus, if you have my luck,t he grocery store never seems to carry queso. What’s a girl (or guy) to do? Make burrito casserole!

 

This casserole is absolutely great, and it’s very easy to throw together. In fact, when I’m working late, my 15-year-old daughter enjoys helping me make dinner, and this is something she’s made all by herself before. See? Burrito casserole is so easy to make even a kid can do it. You’ll love the layers of spicy meat, cheese, and hot tortillas.

Butternut squash is most often used as a part of a side dish, but with this Sausage-Stuffed Butternut Squash recipe, it really sings as a main dish! Winter squash, particularly this form of it, has just the right amount of sweetness to go well with most anything. I think that pairing it with these other healthy and fresh ingredients makes for a spectacular hearty dinner for the colder months of the year. And you can go easy on yourself since this is a low fat dish!

 

I had heard of stuffed eggplant, but I hadn’t tried using eggplant in a stuffing before. I have to say, it works really well for this recipe. It adds a bit of earthiness to balance the sweet and savory flavors nicely. Each butternut squash half is pretty much a meal in itself, though of course you could always throw in a good salad if you want something extra on the side. And of course you can expand the recipe, if you have a larger group to feed. Enjoy!

Just a Few Easy Steps to a Filling, Yummy Meal

If you are looking for a healthier alternative to the usual heavy casserole options for dinner, try these Lean Beef Cabbage Rolls!  They’re packed with fiber, lean protein, and great flavor, and they’re easy enough to make for a midweek meal. Not to mention they are so delicious that no-one is going to think of them as “health food”! I actually have always liked cabbage, in cole slaw or even relatively plain (as in corned beef and cabbage), but I know that it isn’t exactly everyone’s favorite vegetable – or favorite food, period.

In this form, however, even some of the staunchest cabbage critics will enjoy it. Moreover, though the ground beef used here is extra-lean, the dish has great multi-dimensional savory flavor. And you can switch it up by using ground chicken or turkey instead!

I’ve actually used ground turkey in mine before and the family couldn’t even tell the difference. It turned out really nice and only contained half the fat. What a score!
