A Simple Casserole That Works For Everyone

Sometimes, you want a big ‘ol plate of Mexican food, but you haven’t the energy to whip up authentic tortillas, salsa, and refried beans. Plus, if you have my luck,t he grocery store never seems to carry queso. What’s a girl (or guy) to do? Make burrito casserole!

 

This casserole is absolutely great, and it’s very easy to throw together. In fact, when I’m working late, my 15-year-old daughter enjoys helping me make dinner, and this is something she’s made all by herself before. See? Burrito casserole is so easy to make even a kid can do it. You’ll love the layers of spicy meat, cheese, and hot tortillas.

When most people think of a Spanish casserole, they don’t immediately think tater tots, but I say…why not?

They make for the perfectly crispy, and crunchy crust that just adds to the taco-like feel of the dish.

This delicious cheesy casserole, takes out some of the guilt of making tater-tots your main staple at dinner time.

And trust me…you won’t hear ANY complaints from the kids, on this one.

Once you taste this dish, you’ll be thinking up all sorts of ways to eat those favorite tots.

This recipe is obviously a kid pleaser, and is simple and quick to whip up.  

Ready in about 40 minutes, this bubbly and cheesy casserole serves up to 6 people.

One Of The Easiest Casseroles Out There, With a Southwestern Flare!

Everyone thinks of the word “casserole,” when they think of an easy bake, weeknight solution, but how many people think of that same word when it comes to Spanish food? Well they should, and here’s why!

Green chiles, enchilada sauce, baked, chicken, you can’t really go wrong with this dish. Mix that in with a corn meal base, and you have yourself a well rounded meal, the whole family will enjoy! This cornbread chicken casserole has been our favorite for quite a while now. It makes a wonderfully tasty weeknight meal, and I like serving it with fresh green salad and homemade crusty bread, to balance out the spicy flavors.

Choose the perfect kind of salsa for you, depending on how hot you’d like your dish to be. You can also add even more kick by choosing different kind of chilies or just adding more of them.
