Corn casserole makes the PERFECT holiday side dish.

My husband absolutely loves corn. It is his favorite veggie to enjoy. Although not particularly the healthiest, it is the one he loves to eat with every meal. He loves broccoli, cauliflower and green beans, sure. But nothing quite beats the taste of a nice pile of corn over his mashed potatoes and gravy. He will even make these weird combinations, like pasta and meatballs with corn, or rice and beans. It definitely baffles me the way he is able to enjoy it with anything!

Recently, my good friend and neighbor Anne brought me a delicious treat she had made on an afternoon off. She knew that my husband Mikey loves corn so she made him a cornbread casserole unlike any other we had tried. Then, on top of it all, she made some tasty honey butter to go with it.

It became like a little soft mush over it that was gooey and delicious and to top it all off, she drizzled it with a little more honey. It was a perfectly sweet and salty treat that in my husband’s opinion, matches with every meal I could possibly make. I think this cornbread recipe is one that will be sticking around for a while.

I don’t know about you folks, but I am a fan of everything spaghetti. Noodles and sauce with a fine dusting of grated parmesan cheese is one of my favorite meals. However, my dear husband does not feel the same sentiments. He claims his mother made spaghetti constantly when he was a child and he is experiencing spaghetti burnout. So, I had to get creative to come up with a solution that would make us both happy. That is when I stumbled upon this baked spaghetti and cream cheese recipe. Wow! This is a real mind blower, people!

I didn’t think spaghetti could ever be any better until I found this recipe. To make matters even more awesome, my husband is a HUGE fan of this spaghetti bake. He loves the cream cheese mixture that is baked inside of it. My husband and kids really love this recipe and have requested it time and time again. Needless to say, baked cheesy spaghetti is a keeper in our household.

Potato lovers rejoice! No longer is a loaded baked potato shunned to a side dish, this twice-baked potato casserole moved up to the main meal and will fill your family’s bellies with hearty goodness. With a combined prep and bake time of 35 minutes, this dish is perfect for a weeknight meal! I love it whenever I find a recipe that doesn’t make me slave away in the kitchen for hours.

 

Going back for seconds is a must with the delicious flavors of crispy bacon, gooey cheeses, sour cream, and green onions to top it off. Make this for a pot-luck, or a family gathering as it comfortably serves 6-8. Of course, you could double the ingredients to make sure you’ll have tasty leftovers for lunch the next day. That’s what I always do, and so far I have never regretted it!

    This Cheesy Bacon Dip is a great choice if you want to make a quick and easy snack for yourself or for any gathering. I love serving it with tortilla chips or crackers. My husband enjoys eating it with pretzels. It’s all up to personal preference as this is a dish that pairs so well with pretty much anything!     As is, the recipe serves six people, but I don’t think that you would have any trouble expanding it as you need. Just some quick mixing and the dip bakes in about half an hour.     These Cheesy Bacon Breakfast Potatoes make for a simple yet delicious main course. With just three rather common essential ingredients (plus some salt and pepper and a simple garnish), this recipe won’t break your back or the bank. This is properly a breakfast recipe, but I normally eat my breakfast food at suppertime. Breakfast food like this is great if you want something soothing and savory but don’t want anything too over-the-top heavy for dinner.

     

    I was intrigued by this recipe, as it calls for baking the bacon (instead of frying it on the stove) and reserving the bacon grease for the other baking steps. I have to say, it turned out nicely. Bacon grease just adds so much great savory flavor to everything. I kept things simple and breakfast-oriented and had these potatoes with some eggs and grits, but if you want to serve this as a side dish in a bigger meal, I’m sure that it would go nicely with some steak or even some fried pork chops.

    Light this is not, but this Cheesy Twice-Baked Potato Casserole is delicious! If you are a cheese lover, this recipe has a good sampling of all of the favorites. There’s nothing fancy about this recipe. In fact, it’s rather simple to put together, even if you do (of course) have to allow time for the potatoes to bake. It’s loaded with good flavor, and it has ‘comfort food’ written all over it.

     

    This casserole is loaded with cream and three types of delicious cheese, with just the right amounts of rosemary, oregano, and nutmeg to draw out all of the sweet and savory flavors. I think that this is a great choice of side dish if you want something rich and hearty to complement a main dish on the leaner or lighter side – though you could serve it with any main course that you’d otherwise serve with basic mashed potatoes. I had mine with some yummy meatloaf.

    I am so in love with slow cooker recipes right now! With all the big family gatherings and huge dinner preparations lately, it’s such a relief to just throw a bunch of ingredients into the crockpot and let it do all the work instead.

    Not that I don’t enjoy cooking – I really do, but sometimes other things in life just get in the way. If you want a hearty, “meat and potatoes” sort of meal, this Cheesy Potato, Bean, and Beef Casserole is a great choice. The slow cooker does most of the work for you, with only a very modest amount of prep required. This would also make a wonderful addition to your next BBQ party.
