My mom had to lose weight three years ago following a health scare.  After success with Weight Watchers years ago, she tried to find a recipe for soup she remembered loving.  This updated version made with fresh veggies was exactly what she needed.

It took a lot of dedication, but my mom still credits what she calls “The Soup” with helping her lose those extra pounds.

Sometimes, you want a big ‘ol plate of Mexican food, but you haven’t the energy to whip up authentic tortillas, salsa, and refried beans. Plus, if you have my luck,t he grocery store never seems to carry queso. What’s a girl (or guy) to do? Make burrito casserole!

This casserole is absolutely great, and it’s very easy to throw together. In fact, when I’m working late, my 15-year-old daughter enjoys helping me make dinner, and this is something she’s made all by herself before. See? Burrito casserole is so easy to make even a kid can do it. You’ll love the layers of spicy meat, cheese, and hot tortillas.
