I Wouldn’t Mind Eating This For Two Weeks In A Row!

Being the work-from-home parent in our house, I’ve decided it’s my job to plan the menu and take care of all the dinner preparations.

My husband would be more than happy to take turns, but since I personally hate grocery shopping I’m just letting him do that, instead! To me, that’s a big win! To be honest with you, ever since I got my first slow cooker, making dinner has been a breeze. I didn’t think meals would turn out as delicious in the crockpot but I was so wrong! Some of them turn out even better than their stovetop counterparts, and I guess that’s because they get to slowly cook to perfection, for hours.

This recipe from the Slow Cooker/Crockpot YouTube channel is one of my favorites. I had made Salisbury steak a hundred times before, but never in the crockpot. Once I tried this recipe, there was no going back. I’m so glad I came across their video, you should check it out, too!

No, It’s Not Lasagna – It’s Something Even Better!

Make waves for an awesome weeknight lifesaver! This recipe has been there to help me through the worst, craziest and most exhausting days. Who would have thought you could make such a hearty meal with only a few minutes of prep work? It’s so easy, you can even have your kids make it for you. I’m not joking!

I always keep these ingredients at hand, in case one of my days turns into a chaos again. I’m not saying that happens a lot but – yeah, it happens a lot. We all know what it’s like, don’t we? When you drag your kids home, exhausted, grumpy but alive (I’m quite proud of that last part) and you realize you still have to make dinner. Not always fun, is it?

No matter how grumpy my 11-year old is, she is always ready to help me out in the kitchen when I tell her we’re making this delicious burrito casserole. All we need to do is brown the meat, mix all the ingredients together and throw some cheese on top before baking. Super simple!

This Super Easy And Delicious Salad Is Good For You!

Wow, do I feel like I could eat a bit lighter after the summer! All those juicy BBQ meals with extra sauce and heavy desserts… And with the holidays coming up, I should definitely watch what I eat for the next couple of weeks, at least. But I don’t want to go on a diet, and I don’t want to start eating “health food”. You know, the stuff that’s supposed to be good for you but doesn’t really taste like it, haha!

I’m just kidding. I know that healthy food is a great thing and that there are actually plenty of dishes that are considered lean and healthy – yet, they taste amazing. What I decided to do to get things started is have more salads. Not the heavy, mayo type of salads but something that’s fresh and tasty.

For example this taco salad from Making Memories With Your Kids. Lovely, fresh iceberg lettuce and tomatoes, great protein from the meat and the beans, and plenty of amazing flavor from the seasonings. I could eat this every day of the week – and maybe I will!

Wow Your Family With These Super Scrumptious Mini Meatloaves!

I am a huge fan of these stuffed mini meatloaves. Not just because they taste amazing, but also because it is so easy serve individual portions when you’ve got these instead of one big loaf! These also cook a lot faster than your usual meatloaf, which is always a plus if you ask me. We all know that pack of hungry wolves won’t leave us alone until there’s food on the table, right?

I like using a combination of ground beef and pork for these. In my opinion, it gives you the best flavor – but you could, of course, choose turkey for a leaner option! Another great thing about these is that you can use any kind of cheese of vegetables, or even stuff everyone’s mini loaf with their personal favorites.

I like to serve these with mashed potatoes, or sometimes with potato wedges. You know what my husband does? He grabs a couple of these with him for work, and eats them cold straight from the fridge. He says they’re delicious that way, too!

Here’s Your Quick Fix To Midweek Madness

Don’t you just love it when you suddenly come across a recipe that basically saves your life that day? It happened to me last week, when I was having one of the worst days ever. I was down with a horrible cold but I couldn’t just stay and rest, because I had to make a deadline and I wasn’t going to slip, unless I died and they didn’t have wi-fi in the grave.

Ok, maybe I was being a little over-dramatic there. But the point is, I was feeling miserable, I didn’t have any extra time, and I couldn’t even think of leaving my house and going to the store. If I had, I probably would have ended up being arrested. Trust me, I looked that bad.

Right then and there something magical happened. This Recipe Will Take You Back To Mama’s House

You know what always reminds me of home the most? Meatballs. No matter how far from home I happen to be, I can always get these familiar ingredients and feel like I’m back at my Mom and Dad’s house.

I swear, sometimes making these meatballs makes me feel younger, too! I have so many fun memories from my childhood and this was a meal we always very much looked forward to, my siblings and I. Over the years I have tweaked the recipe just a tiny bit, and my kids love these as much as I always have!

I like to pair these with garlic mashed potatoes and gravy, but these will go together with pretty much anything. Spaghetti? Yum. Dinner rolls? Mmmmm! Potato wedges? Yes, please!

If it was up to my kids and my husband, we would be having these meatballs every week! I always bring the kids along when making these – they love to help me out in the kitchen, and they especially enjoy making meatballs. Which is perfect for me, since they really are a big help!
