So Scrumptious, You’ll Want To Eat This With A Spoon

Last year I did something awesome. It may not seem like that big of a deal to others, and I certainly didn’t know at the time that it was going to rock my world. What I did was – I made eggplant dip for the first time in my life. I had never even thought of using eggplant this way, and I had my doubts about how it would turn out.

Somehow I wanted to give it a try, anyway, and it turned out better than any dip I had ever tried before! So it quickly became a staple at every game night and potluck I attended since.

It’s amazing how beautifully creamy this looks and tastes like, even though it is vegan and doesn’t have a bit of cream in it. I know the word “vegan” may scare off some people, but please, give this one a try! You may never go back to your old, sour cream/mayo/cheese dip recipe again.

This dip is also easy to prepare and you won’t have to chop anything. In fact, you could throw all the ingredients in a food processor to make it even easier!

Want to hear something funny? Until about two months ago, I had never even heard of cassoulet. If it doesn’t ring a bell for you, either, no need to worry. It’s only the best freakin’ meal ever! I am not kidding, it really is fabulous. I’m forever grateful to my friend for letting me know this awesome dish exists!

A cassoulet is a traditional French dish that contains beans and at least one kind of meat. You won’t be able to make it in 30 minutes, so if you’re looking for a super fast meal, you may want to save this recipe for later. But I guarantee; when you make this, it’s a meal you’ll never forget!

This recipe has quickly become my favorite. I’ve already made it twice; once for my family and another time for friends that were staying overnight. Everyone loved it!

When I was a little girl my family would often spend our summer at the campground. I loved it! We would buy a seasonal pass and park our camper out at the state park for the entire three months of summer. I made so many friends each year. Such wonderful memories! Another great memory about camping was the food. My mom would often make us steak and/or chicken kebabs on the grill or over the fire pit. They tasted scrumptious! Juicy meat and fresh veggies on a stick? yes, please!

These steak kebabs are insanely easy to make. The only “fancy” ingredients you need are the skewers. One time, Mom forgot the skewers so she used marshmallow sticks. LOL!

What’s great about this recipe is that you can use the flavorful marinade for lots of other things, too. However, I intend to keep barbecuing for as long as I possibly can this year, before I give up these kebabs!

The crispiest chips on the face of the Earth.

We have a small, local company producing these amazing, artisan-style potato chips in all kinds of flavors you can think of. They are, without a doubt, the tastiest potato chips in the whole universe!

It’s great that they are local, it’s even better that they’re only producing small amounts for the best quality, but there is a downside, too. As incredible as they are, they’re pretty darn expensive and I often end up buying something that’s a little easier on my wallet.

I had tried making my own potato chips in the oven before but it was a huge disaster. Some of them burned, while some remained soggy, and I ended up tossing it all in the trash. I thought it was such a waste of time and ingredients that I might as well buy the expensive chips from the store.

I thought I’d need to deep fry the chips to make them all crispy and crunchy and perfect. But I sure wasn’t going to buy a deep-fryer for that! And I didn’t have to – you know why? Because I learned you can make out-of-this-world potato chips in the microwave!
