Having tacos is one of my favorite dinners. In fact, we actually had tacos last night. I cooked the beef, shredded the cheese, chopped the tomatoes, lettuce, and onions, and set out all of the condiments. Wow, it was actually quite a lot of work and a mess when I think about it haha! That’s why casseroles like this cheesy taco bake come in handy from time to time. There really isn’t much fuss.

I can’t believe how quickly this taco bake comes together. All I have to do is brown the beef and then dump everything into my baking dish. That’s it! after a little while a gorgeous and flavorful taco bake pops out of the oven. Yum!

I remember the first time I had ever heard of spaghetti squash. My friend and neighbor Sally gave me the rundown on this very versatile vegetable. I was shocked to learn that you could substitute flour pasta for this squash. I wasn’t so sure about all of that until sally made me a pile of the stuff covered in marinara sauce and Parmesan cheese. How many ways are there to say “yum?” So, when dear old Sally brought another spaghetti squash recipe to my attention I was all ears.

You won’t be eating this dish as a spaghetti meal but rather as stuffed squash. You won’t believe how flavorful this all turns out. Yosemite Sam would be so proud of this dish that he just might calm down for a minute to eat with us. Seriously, this recipe rocks and your whole family will roll with it.

The other day my gal pal Sally sauntered over from across the street to share with me all the details of her sister’s bridal shower. When she got to the food my ears perked up like a French poodle’s because I love food! Especially, party food. So anyway, Sally starts telling me about this taco salad that was at the party. Yeah, okay, taco salad is good but it’s pretty common, you know? Well, folks, this taco salad had a twist…a seafood twist. It was a layered popcorn shrimp taco salad. Sally said that it was a major hit and very tasty.

You know me, I had to seek out this recipe and make it for myself. Of course, I had to wait for a day that my littlest herd member wasn’t going to be home because he is allergic to shellfish. Poor guy! He had a hamburger with grandma so all was well with the world in the end 🙂

baking powder, baking soda, Bertolli extra-virgin olive oil, bisquick, black pepper, Bob's Red Mill, burrito casserole, Clabber Girl, Daisy sour cream, domino sugar, eat, Eggland's Best eggs, food, Gold Medal flour, jalapeno peppers, Johnsonville, kosher salt, Kraft, land o lakes butter, lean ground beef, McCormick spices, Mexican Cheese, Morton salt, mozzarella cheese, Ortega, recipe, refried beans, salsa, taco seasoning mix, TruMoo milk, water, Weight Watchers, Wesson vegetable oil

Sometimes, you want a big ‘ol plate of Mexican food, but you haven’t the energy to whip up authentic tortillas, salsa, and refried beans. Plus, if you have my luck,t he grocery store never seems to carry queso. What’s a girl (or guy) to do? Make burrito casserole!

This casserole is absolutely great, and it’s very easy to throw together. In fact, when I’m working late, my 15-year-old daughter enjoys helping me make dinner, and this is something she’s made all by herself before. See? Burrito casserole is so easy to make even a kid can do it. You’ll love the layers of spicy meat, cheese, and hot tortillas.

Have a savory, Mexican-style sandwich with slow-cooked pork for your next party or tailgate!  This Pulled Pork Cemita recipe is a nice twist on traditional pulled pork; make them with full-sized buns as a full sandwich, or use smaller buns to make them into bite-sized sliders.

The wonderful tailgate group that I am a part of often has all sorts of elaborate things to serve all of the hungry eaters that pass through, but as a warm-up, they’ll often have some small sandwiches or “sliders” to go with the basic snack food.  This pulled pork cemita recipe is great for that–and hey, after having fried salami, turkey and mayo, or something very basic like that for a while, you have a hankering for something a little different.  This will give your next barbecue, tailgate, or football party a little Mexican flair, and thanks to the convenience of the Crock-Pot (or whatever slow cooker you prefer), it’s not all that difficult to put together.
