The other day my gal pal Sally sauntered over from across the street to share with me all the details of her sister’s bridal shower. When she got to the food my ears perked up like a French poodle’s because I love food! Especially, party food. So anyway, Sally starts telling me about this taco salad that was at the party. Yeah, okay, taco salad is good but it’s pretty common, you know? Well, folks, this taco salad had a twist…a seafood twist. It was a layered popcorn shrimp taco salad. Sally said that it was a major hit and very tasty.

 

 

You know me, I had to seek out this recipe and make it for myself. Of course, I had to wait for a day that my littlest herd member wasn’t going to be home because he is allergic to shellfish. Poor guy! He had a hamburger with grandma so all was well with the world in the end 🙂

If you have a hankering for some good Southern cookin’ and the convenience of a fast one-pot meal, give this Quick One-Pot Red Beans and Rice recipe a try. It’s great flavor without much hassle or time investment.

 

I love red beans and rice. It’s a classic Southern meal, particularly good for the cooler months. The traditional method involves cooking the beans with some good herbs, spices, and various types of pork until the beans (and other ingredients) practically make a gravy. It’s delicious, but it takes an incredibly long time, and then you have to cook the sausage and rice separately. This recipe lightens things up a bit (some people who aren’t fans of creamier or soupier beans may actually prefer that; I like them both ways), and even more importantly, it combines everything into one easy pot and speeds everything up while still bringing that great Deep South flavor.

If you want something with a little Mexican or Tex-Mex flavor that is tasty but a bit outside the usual options, this Slow Cooker Chicken Enchilada Casserole is a good choice. It’s also really easy to put together.

 

Is this “traditional”? Well, no, I don’t think you can call it that, but I do like the flavor, and sometimes, you have to be a bit creative and go in a non-traditional direction to keep things interesting and get out of a food rut. And I know that some traditionalists may frown a bit on the “dash of this, can of that” style of cooking, but it is a quick and easy way to mix things up a bit and make a hearty meal. Suffice it to say that I will be breaking out my Crock-Pot for this again.

Here’s a Really Quick And Easy Formula For a Tasty Meal!

I am so in love with slow cooker recipes right now! With all the big family gatherings and huge dinner preparations lately, it’s such a relief to just throw a bunch of ingredients into the crockpot and let it do all the work instead.

Not that I don’t enjoy cooking – I really do, but sometimes other things in life just get in the way. If you want a hearty, “meat and potatoes” sort of meal, this Cheesy Potato, Bean, and Beef Casserole is a great choice. The slow cooker does most of the work for you, with only a very modest amount of prep required. This would also make a wonderful addition to your next BBQ party. It’s filling, warming comfort food, made really easy with the Crock-Pot. Heck, how can you go wrong with just seven ingredients (plus water, salt, and pepper) and four easy steps?

It may not be as famous as seafood gumbo or jambalaya, but you can get that great flavor of New Orleans and the Deep South in easy-to-make casserole form, too. This Cajun Shrimp & Cornbread Casserole has all of those great savory tastes with just the right amount of spice for a little kick.

And you will be amazed how quickly you can put this together! It’s hard to beat a casserole for convenience, and I have always loved the cuisine of the Deep South (call it a bit of a bias for “home”).

This recipe combines the two in a nice way that I hadn’t tried, and I was very happy with the results.  If you like cornbread, you really should try this! My family loved it, and now they’re demanding I make it at least once a month!
