There is always that one day when you’re craving for anything cheesy. During these days, I long for anything Tex-Mex. All that cheese and beef together in one recipe is something that I can’t take away from my system. And I crave badly. Whenever I want to eat something so bad, even if I’m already in my pajamas, I will just put on a thick sweater, get my car keys, and then drive to the nearest Taco Bell or wherever there’s something that can satisfy my little craving. It happens to me almost every week. My friends say it’s because of stress. I deprive myself of good food whenever I’m busy; so when I have the time to think, my brain reminds me of those things that I have deprived myself of in the past few days and then they will catch up on me, hence the intense craving.

The temporary solution that I’ve found is to look for recipes that will allow me to eat the food that I love without me stressing over the preparations. It only means one thing—I need to find recipes that would allow me to keep them in the fridge for a few days so that I could just reheat a piece every time I have that short burst of craving. This one that I found at Taste of Home combines the flavor of two of my favorite food—tacos and lasagna.

How’s it going, everyone? I’m just sitting here drooling over this picture of savory white bean chili. I’m a HUGE chili fan, and always have been. I’ve participated in chili cookoffs, chili cookouts, and plenty of chili eating. However, I’ve never experienced chili without tomatoes.

 

In fact, the whole concept just seemed silly to me when my husband suggested that I make a white chili. I was all, “Whatchu talkin’ bout Willis,” as he slowly backed away from my condescending glare. However, being the good wife that I am, I decided to give this recipe a shot, and boy, am I glad that I did. White bean chili is the cat’s meow!

Hey, who doesn’t like a good taco or burrito, every now and then, but sometimes, particularly during the cooler months, a hearty soup just hits the spot better. This Beefy Mexican Rice Soup brings all of that great Mexican-style flavor in a form that’s great for warming you up on a cold but busy midweek night. If you want something with a little Mexican or Tex-Mex flavor that is tasty but a bit outside the usual options, this Slow Cooker Chicken Enchilada Casserole is a good choice. It’s also really easy to put together.

 

Is this “traditional”? Well, no, I don’t think you can call it that, but I do like the flavor, and sometimes, you have to be a bit creative and go in a non-traditional direction to keep things interesting and get out of a food rut. And I know that some traditionalists may frown a bit on the “dash of this, can of that” style of cooking, but it is a quick and easy way to mix things up a bit and make a hearty meal. Suffice it to say that I will be breaking out my Crock-Pot for this again.

As far as easy comfort food goes, particularly for the cooler months of the year, it’s hard to beat a good, savory soup. This Easy Taco Soup has a hearty flavor to it, and after a bit of prep,  the slow cooker does the rest of the work for you.

 

After making my second batch of spaghetti meat sauce for the season not too long ago, I was looking for something a little different. (Don’t get me wrong; I love the spaghetti sauce recipe that I adapted from what Mother used to make, but I do like to mix things up, and it would be a shame to get bored with something like that.)  This soup recipe keeps it really easy and low-hassle, and it has some of that Southwestern flavor in which I like to indulge, now and then.

Burritos… who doesn’t love them?  Add a little crisp and now we’re talkin’.  These crisp chicken burritos are just the thing to mix up for a great addition to Taco Tuesday! This quick and easy recipe makes 8-10 servings, and is ready in under an hour.  Serve this with a dollop of sour cream and a side of Spanish rice, and you’ve got yourself a Mexican meal that will melt you!

 

There are a few steps, but it’s not that difficult a recipe. It’s quick, simple, low-hassle; for that matter, you could probably modify things quite a bit, according to your tastes, though it is delicious, as is. Surprise your family with this superb meal and it will instantly become everyone’s favorite!

A Southwestern Style Casserole, to Soothe the Soul

If you are itching to make use of some ground beef but want to get away from the usual hamburger or beef taco meals, this Southwest Beef & Mac Casserole is a nice alternative. It gives you the cheese-loaded flavors of the Southwest in about an hour (about half an hour of prepping and cooking and half an hour of baking).

I like to grab a batch of ground beef when I see some on special (yes, it still happens, though you really have to look out for it), but there are only so many burgers and beef tacos that I can handle in a short time span. Don’t get me wrong, I love tacos and certainly enjoy a good burger, now and then, but too much of a good thing in too short a period of time can get really boring, you know? This casserole recipe is a straightforward way to make creative use of that ground beef and put a hearty, filling meal on the table. It also happens to smell nice while you are cooking it and to look really pretty coming out of the oven.
