Everyone Should Know How To Make This Meal!

Do you ever get the feeling you’ve made ALL your recipes a thousand times already, and you just don’t want to make any of them, ever again?

Well, I do, and apparently my kids feel the same way, too… I have taught them to be grateful and appreciate everything they have, including a warm meal every day. But I totally understand that they roll their eyes, when they find out we’re having some form of chicken and noodles for the third time in two weeks. So lately, I’ve been on the lookout for easy weeknight dinner recipes that would be both, healthy and inexpensive.

This traditional carrot rice loaf recipe from Lois’ wonderful blog Stuffed At The Gill’s is pretty awesome! This would make a tasty side dish but it is rich in protein, so you could just as well serve it as the main dish, too.

I have been looking for healthier dinner ideas that would get me back on track, after all this holiday meal craziness. This carrot rice loaf is something I plan on making very often, over the next few weeks! Big thanks to Lois for sharing this!

The sniffles got nothin’ on this soup!

Cold nights are upon us folks, and I could not be less thrilled.  I detest the cold, and living in Miami, well, I get very little of that.  Tonight, though, it is freezing (for me!).  It is a whopping 65 degrees! I am bundled up in sweats, a hoodie, and a blanket over it all and right about now I am wishing for a pair of gloves to wear too.  You may say I’m exaggerating but my body is not cut out for this.  I need the warmth all day, every day!

Well, I have discovered the trick to keeping myself warm at all times: constantly eating soup! The amount of soup I have made in the past month is more than 3 times the amount I have made within the whole year.  I have tried so many recipes for a good, warm, filling and nutritious soup, but I always come back to this one: Chicken Bacon Rice Soup.

It is full of veggies and has loads of potato (which I love!) and also has plenty of chicken (which my husband loves). This is an all-around wonderful soup that I will likely make over and over again throughout this winter.

Let Your Slow Cooker Make Dinner For You Today!

Funny how you remember these random details from your childhood. I’ve noticed my memories often have something to do with food – either the everyday meals we had, or the special treats that we didn’t get often. I’m not sure which category would be better for stuffed bell peppers (probably neither), but I remember us having them just once. It was a regular weeknight meal, nothing fancy, but somehow it was special at least for me. I loved bell peppers and we had them all the time, but mostly just chopped and mixed into salads, or on a sandwich. For some reason that is the only time I remember Mom serving them. I guess the rest of the family didn’t enjoy it as much as I did!

Anyway, that memory immediately came back to me when I saw this recipe. But this isn’t your regular stuffed bell pepper recipe! This time it has been turned into a hearty soup – familiar flavors served in a new way. The best part is; the slow cooker is going to do all the work for you!

So Good, You’ll Want To Make This Twice A Week

Last week I was feeling a little under the weather. Maybe I caught a bug or perhaps I just hadn’t had enough sleep – whatever the reason, I was tired and cranky and I didn’t feel like cooking at all. Don’t you just wish you had a personal chef when that happens? People keep talking about personal trainers but I would definitely rather hire a chef!

Anyway, trying to avoid the fact that I was going to have to cook something eventually, I started searching online for easy recipes. I didn’t really care what it was, as long as I didn’t have to go to the store to get the ingredients, and as long as it only took me a maximum of twenty minutes. Lucky me, it didn’t take long until I stumbled upon this one. Sometimes it amazes me how you always seem to make the most delicious and comforting meals from such simple ingredients.

Hello, everyone! I hope this post finds you all happy, healthy, and well. Today, we are going to be talking about this fabulous green chile and chicken recipe. Boy oh boy, this is a party in a pan guys and gals! Or should I say a “fiesta” in a pan? The flavors that are in this dish really warm your mouth and belly with the essence of Spanish spices and ingredients. I love that you can eat this chicken in tacos, over rice, wrapped in tortillas, or just as it is. What is your favorite way to enjoy Mexican food such as green chile chicken? Make sure you set out all of your favorite taco fixings with this meal. I served it with salsa, refried beans, lettuce, diced tomatoes, onions, and sour cream. My youngest child was upset that there was no guacamole dip, so I noted this little discrepancy for the next time I make green chile chicken.

Dude. This recipe for slow cooker beef tips and rice is, hands down, the BEST recipe of its kind that I have EVER come across. Seriously. Wow! I made this the other day for my family and they devoured it like cattle coming in from the field. Actually, they devoured it like a hungry fox coming into the chicken barn.

 

I cannot stress enough how easy this recipe is to make. All you do is toss 8 easy-to-get ingredients into your slow cooker, set it, and forget it. It’s really that simple. Once it’s ready, serve the beef tops over a bed of rice and wait for your taste buds to go crazy with happiness. Thsi recipe has earned a permanent spot on my monthly meal plan schedule.
