You Won’t Believe You Hadn’t Tried This Before!

Don’t you just love the colder months of the year, when you can sit back by the fireplace and have a glass of wine, while a hearty soup is simmering in the kitchen? Ok, ok – it may not always be this way… Especially here up North, where we are getting freezing cold temperatures and you can’t light a fire because you’re too cold to get out of bed! But no matter how chilly it gets, I would still make this lovely winter minestrone soup.

I used to hate minestrone soup. I’m just being honest here! They were serving it in our high school cafeteria and it was such an ugly mess that I couldn’t make myself eat it. Well, something must have changed – maybe I grew up or maybe this recipe from my sister is just so much better. Whatever the case, I am totally in love with this recipe!

I’ve made this twice already since I found this a couple of weeks ago. This recipe makes a huge batch so it’s even better – just one pot, and two days worth of dinner all in one go!

This 5-ingredient, 5-step Slow Cooker Casserole Is Going To Blow Your Mind

During the past two weeks, how many times have you heard the phrase “Mom, I don’t like that!” It seems to me I hear it every single day now, as my youngest is having some kind of a phase with food at the moment. I swear he thinks everything is suspicious these days! I have really struggled trying to find recipes he actually likes.

This cheeseburger casserole from The Simple Parent is one that my picky eater really loves. And it’s not just his favorite; our whole family enjoys it. For me it’s a total lifesaver; I always keep these ingredients at hand and it takes me just a few minutes to prepare this. Plus, it’s very easy on your wallet, too!

You can make any desired tweaks to the recipe – I often add different seasonings to get new flavors, but I tend to keep the basic ingredients the same every time. Sometimes I do add veggies, and low and behold, my picky eater hasn’t even complained about those!

Love, Love, LOVE This Soup!

Here up North we are starting to feel the weather change for the colder. Most people say they wouldn’t want the summer to end, but this is my favorite time of year. I love the colder months – the weather gives me a great excuse to cook all of my favorite soups and stews. Not that I can’t make them year round, but I do think fall and winter make these particular meals taste extra delicious!

I’m glad that my whole family enjoys these kind of recipes; we’re having soup about three times a week now! I’ve collected a bunch of super delicious recipes over the years and this vegetable soup is one of them. I like to make a double batch of this – it keeps well in the fridge for a few days (in my opinion, it only gets better) and everyone is going for seconds, anyway!

I’ve tried several veggie soup recipes in the past but the combination of these vegetables is just perfect, if you ask me. The soup is flavorful without any meat at all, but of course you could add some if you’d like. I bet this would taste amazing with some chicken in it, too.

Here’s a recipe that’ll make you feel like a true cowboy, or cowgirl! Perfect for the chilly, dreary days and guaranteed to keep you warm, no matter what the season. Straight From Grandma’s Recipe Box To Your Dinner Rotation

Oh how I love these cooler days, with a little bit of rain and the fresh winds blowing after a long, hot summer! The change in weather makes me want to make changes in my diet, too – and I gotta tell ya, my mirror kind of agrees with me… What is it about the BBQ season that shrinks all my clothes? I didn’t have that many steaks with creamy potato salad, or ice creams, or s’mores, did I..?

Whatever happened during these past months is history now! I don’t want to go on a diet to lose weight, but I thought it wouldn’t hurt to add some tasty, lean soups into our dinner rotation. That way you could kind of accidentally lose a couple of pounds, right?

This soup, though, would be in my dinner rotation even if I wasn’t concerned about my weight. You see, this has been one of my favorite recipes ever since my grandma made this for us, when we were little. She always used rather fatty sausages for this, but if you’d like to keep this low-calorie, choose lean ground beef or turkey – or don’t add meat at all!

Could I Please Have This For Every Meal, For The Rest Of The Year?

Before we get started, I have to say that I’ve never been to Louisiana. It’s one of those places I’ve always dreamed of going, but for one reason or another it hasn’t happened yet. I have plenty of friends, though, who’ve been there more than once – and they all tell me the food is amazing. I bet it really is! And I always try to find recipes that would take me there (without even leaving my kitchen).

Hopefully some day soon I’ll be able to visit Louisiana and enjoy those wonderful meals! Until then, this is one of my favorite recipes that I believe has a very authentic flavor. The key thing is to use good quality seafood!

Some people tell me a good gumbo should be so spicy that your lips are on fire – others say that you’re not supposed to make gumbo too hot and spicy. I’m not sure if there’s a right or wrong but I prefer mine with a little bit of kick! With this recipe, that’s totally up to you.

The Flavor Is Spot On!

I really love the time of year when it’s not exactly summer anymore, but it still isn’t fall, either. The nights are getting a little bit chilly and the wind is changing somehow. It always makes me feel like I want to light up dozens of candles all around the house and curl up on the sofa, under my favorite blanket, with something that warms me up – whether it’s a cup of hot chocolate or something else. This recipe sure is “somethin’ else”!

Is there anything more comforting than a steaming hot bowl of creamy tomato soup? I don’t think so! It took some trial and error to learn to love tomato soup, and I think it was all because of using the wrong recipes. Some of them turned out too tangy and bitter, and I thought maybe I just didn’t like tomato soup, after all.

But I didn’t want to give up and I gave this creamy version a try. Super yummy! This is the perfect pick-me-up after a rough day, or a great first course of a special meal.
