If you are a chocolate lover but think that the average chocolate cake is a bit, well, one-dimensional, then this Black Magic Cake may be just right for you. It’s rather easy to make, can be made in under an hour, and makes use of a bit of coffee to draw out the elements of chocolate flavor that are all too often muted. I always thought that coffee and chocolate went well together; it turns out that they work brilliantly with each other in a cake!

 

I used to not like dark chocolate at all. Whenever someone offered me a slice of dark chocolate cake, I would cringe inside and have the tiniest piece ever. But something has happened over the years! I guess I’ve grown up because now I just can’t get enough of dark chocolate cakes, and this recipe is by far one of the best I’ve tried.

I love red beans and rice. It’s a classic Southern meal, particularly good for the cooler months. The traditional method involves cooking the beans with some good herbs, spices, and various types of pork until the beans (and other ingredients) practically make a gravy. It’s delicious, but it takes an incredibly long time, and then you have to cook the sausage and rice separately. This recipe lightens things up a bit (some people who aren’t fans of creamier or soupier beans may actually prefer that; I like them both ways), and even more importantly, it combines everything into one easy pot and speeds everything up while still bringing that great Deep South flavor.

Cooking at home with lean, health-conscious ingredients is a great way to have a flavorful meal without throwing all dietary concerns to the wind. This Healthy Orange Chicken recipe is a nice choice if you like the taste of Chinese food but need to watch your cholesterol, sodium, or blood sugar levels.

 

I have frequently enjoyed Asian-style orange chicken at restaurants in the past, and as it turns out, it isn’t that difficult a dish to put together. There is a marinating step, but you only need to marinate the chicken for about half an hour. And the agave and low-sodium soy sauce combined nicely with the other ingredients to make a delicious lightened-up sauce (while keeping the sodium levels and glycemic index relatively low).

If you like a little spice in your dessert, this Autumn Spice Cake is just what you’re looking for. It has just the right balance of “sweet spices” for fall and comes with a lovely cream cheese frosting. I do love fall baking season. Summer is great, but with the sweltering heat and all of the barbecue you are usually eating, dessert options can be a bit limited. Cooler weather makes for many more options for great cakes.

 

A smooth cream cheese icing makes for a nice touch for a cake with such flavor depth. I happen to think that the pecans make for a nice texture contrast, but if you’re not big on crunchiness with your cake, feel free to do without them.

This Chocolate Wacky Cake recipe may be, well, a bit wacky, but you’ll love how it turns out (and how easy and quick it is to make)! It also comes with a simple but very delicious chocolate icing.

 

I have to admit, when I saw the ingredient list, with vinegar and without any eggs (and without butter in the cake itself), I was a bit skeptical. And just 20 minutes to bake–crazy, right? Well, I’m still not 100% sure HOW it works, but it does work beautifully.
