I’m not a fan of baseball, but I always watch it with my boyfriend and his brothers. I know a few basic terms, but if you ask me what is the most familiar term to me, it’s probably “homerun” and I intend no pun. I have gone to a few baseball games with them, and while I don’t understand all of the rules, I know how it works. Tyler, one of his brothers, has a dream of becoming a pro so he is working hard to make that dream come true. And his family supports him all the way.

 

During baseball nights, it’s Tyler who’s assigned to cook the chicken nuggets. He makes the best dressing and his brothers just gang up on him all the time. A few months ago, Tyler made his very first home run and it’s because of his chicken nuggets prowess—he batted his way straight into the heart of one of my girl friends who just happened to visit me that night. She also happened to fall in love with Tyler’s chicken nuggets. My goodness, they’re now the cutest couple ever! And it happened all because of Tyler’s “batter”, this time pun is intended.

I am a huge fan of Asian cuisine. I love all the exotic flavors, spicy dishes and the healthy, fresh ingredients. Whenever I come across a new Asian restaurant, I will definitely clear my schedule and step in for a delicious meal. Unfortunately, there are no Asian places nearby where I live. For a long time I was afraid to try and cook anything like this at home – I thought it would be way too complicated. I was so wrong!

Simple to make, yet a tasty flavor vacation: It’s Slow Cooker Chicken Teriyaki. No need to go the takeout route when you can make this at home so easily! It really is amazing, how simple it is to put so many delicious Asian dishes together. Just throw a few things in the slow cooker, cook some rice, steam the veggies you want to use, and you have an easy, tasty full meal.

Chicken Chasseur is a savory, rustic French recipe that makes for great comfort food during the colder times of year. The sauce (which itself has plenty of mushrooms and tomatoes) goes nicely over rice, pasta, mashed potatoes, and even a variety of different veggies.

 

“Chasseur” is actually the French word for “hunter,” though I’m not sure why that word would be associated with chicken. Perhaps it is meant to refer to chicken cooked well enough that even a life-long hunter would enjoy, or perhaps this is the sort of meal that would be prepared for a hunter while he was away and served at the end of a very long hunt. More traditional versions of this recipe leave the skin on the kitchen and even include a bit of cognac. Minus the cognac and with skinless boneless chicken, this version of the recipe is a bit lighter and lower on the calories, but I assure you that it still has a hearty, multi-dimensional, country-style flavor.

It may not be your typical chicken alfredo recipe, but this Cajun Chicken Alfredo is delicious. It contains just the right amount of spice to wake up the flavor a bit, but the spice is nicely balanced with half and half, so that even people very sensitive to spice will have no trouble enjoying this recipe. I do love Cajun recipes of all types, but ones like these are especially good for midweek nights when you want something really quick and need to keep cleanup to a minimum. I wouldn’t call this traditional alfredo, but it is certainly a yummy one-pot meal!

 

I must say I hesitated for a while when I came across this recipe. I do enjoy Chicken Alfredo as much as I do cajun seasoning, but had never thought of combining the two. Turns out it was a great idea!

If you want something with a little Mexican or Tex-Mex flavor that is tasty but a bit outside the usual options, this Slow Cooker Chicken Enchilada Casserole is a good choice. It’s also really easy to put together.

 

Is this “traditional”? Well, no, I don’t think you can call it that, but I do like the flavor, and sometimes, you have to be a bit creative and go in a non-traditional direction to keep things interesting and get out of a food rut. And I know that some traditionalists may frown a bit on the “dash of this, can of that” style of cooking, but it is a quick and easy way to mix things up a bit and make a hearty meal. Suffice it to say that I will be breaking out my Crock-Pot for this again.

If you have some boneless, skinless chicken breasts that you need to use, and you want to kick it up a notch without too much of a time or labor investment, give this Cajun Chicken & Rice recipe a try. Some recipes from Louisiana and the Deep South can be real labors of love. This one is rather quick and easy, yet it still serves up plenty of good Cajun flavor. It makes for a great weeknight dinner option.

 

I opted to go without the cheddar cheese (which you add at the end, if using), as I wanted a bit of a cleaner, more spicy dish. If you want the dish to be a bit on the softer and creamier side, or if you just really love cheese, then you will want to include it. It’s a delicious recipe, either way – just a matter of your personal preference.

If you like cheese and bacon, you’ll love this Chicken Monterey recipe!  Have restaurant-caliber flavor in about 45 minutes–quick and easy enough for even a hectic midweek night. If imitation is the sincerest form of flattery, I suppose that the Chili’s recipe developers ought to feel very flattered right about now.  I wouldn’t call this any ordinary imitation, though.  You had me at cheese and bacon–yum!

 

Some may say that this would be better cooked on the grill, but I thought that it turned out very nicely this way.  Baking it in the oven made it very low-hassle, too.  I served it with some green beans and macaroni and cheese (can you tell that we love cheese around here?), but I am sure that it would go with plenty of other things: wild rice, baked beans, cole slaw, maybe even a simple rice casserole would work.
