Just a Few Easy Steps to a Filling, Yummy Meal

If you are looking for a healthier alternative to the usual heavy casserole options for dinner, try these Lean Beef Cabbage Rolls!  They’re packed with fiber, lean protein, and great flavor, and they’re easy enough to make for a midweek meal. Not to mention they are so delicious that no-one is going to think of them as “health food”! I actually have always liked cabbage, in cole slaw or even relatively plain (as in corned beef and cabbage), but I know that it isn’t exactly everyone’s favorite vegetable – or favorite food, period.

In this form, however, even some of the staunchest cabbage critics will enjoy it. Moreover, though the ground beef used here is extra-lean, the dish has great multi-dimensional savory flavor. And you can switch it up by using ground chicken or turkey instead!

I’ve actually used ground turkey in mine before and the family couldn’t even tell the difference. It turned out really nice and only contained half the fat. What a score!

One Of Our Favorite Meatball Recipes, Back By Popular Demand

These Cranberry Meatballs pack a lot of flavors and would be great as a party appetizer or as part of a full meal.  And since they stand out a bit from the crowd, they are sure to be remembered (and remembered well). I have done meatballs plenty of different ways, but I hadn’t tried them this way before. Normally, I only think of cranberry (and cranberry sauce in particular) as something for desserts or for certain holiday dishes, but I have to say that it works very well here for something that can be served most any time of year.

That nice sweet and sour combination works well with so many things! My husband had his doubts about these when he heard what’s in them… He’s like that, whenever I’m making something that he thinks is a bit too experimental!

Well, I got the last laugh when he ended up going for a third helping!

Turn the humble same-old, same-old into a family favorite. This Ginger and Orange Glazed Pot Roast puts a great spin on a classic family dinner item, and since the recipe is for your slow cooker, it is super-convenient, as well–no need to worry about burning anything in the oven!

 

Looking back, I can see that Mother really did spoil me for food choices, growing up.  Bad as it sounds, I admit, I remember her pot roast being a bit, well, forgettable.  Not that it was bad–none of her standard meals were ever bad, and her roast always came out rather tender and made a good gravy.  It just didn’t have that “umph” that so many of her other recipes did.  I think that this recipe gives this hearty chunk of beef that “umph”–and thanks to the Crock-Pot, it is about as low-hassle as it gets.

    Chili is always a great option if you want a hearty, filling one-pot meal that makes an ample amount of servings.     Though they’re traditionally cooked in the oven, it turns out that they turn out very well in your slow-cooker, too.  These Slow-Cooker Stuffed Bell Peppers are super-easy to make, and each one is a nice, self-contained meal, with plenty of healthy protein, vitamins, and juicy, savory flavor!

     

    When my paternal grandmother, whom all the grandchildren knew affectionately as “Lolly,” wanted her home to have the captivating aroma of a nice, home-cooked meal, she would chop up some sweet onion and bell pepper and sauteed it in some butter or olive oil for a few minutes.  Something about that smell always drew me in, and I have to say, I always liked the taste of stuffed bell peppers, too.  Much as I liked the Stouffer’s ones from the grocery store, they just didn’t compare to homemade ones.  It turns out, with my Crock-Pot, I could make them at home much more easily–and enjoy that seductive bell pepper aroma all day.  Needless to say, I was very pleased.

    Now THAT’S a Meat-Lover’s Pie–MMM!

    This Tamale Pie is full of hearty flavor! Beef, cheese, a Mexican spice blend, and a cornbread base – what’s not to love? I don’t always bake meat pies, but when I do, I like them to be filling and have a bit of flair. This recipe certainly fits THAT bill – wow! I’m not sure I would have thought of using a cornbread base on my own, but it works really well here. It’s all your favorite Mexican-style food items, in pie form, with a nice Southern twist to pull it all together. I can definitely get behind that!

    You can have this ready in a little over an hour, hour and a half at the most… not bad for something that makes so much and is so filling, I’d say!  I suppose, for a really artisan piece, you would want to make your own enchilada sauce, though with that sweet cornbread base and that cheesy-savory filling, I am not sure how much you gain from that.  The usual Mexican-style sides (refried beans, black beans, Mexican rice) go well with this pie.

    Boy, steaks are really out-of-this-world awesome, done this way!  This Marinated Steak With Bourbon Cream Mushroom Sauce combines two great recipes to produce a dish that is undeniably restaurant-grade gourmet.  And once you have given the marinade some time to work its magic, it doesn’t take very long to cook.

     

    I love a good steak now and then (who doesn’t?), love my creamy sauces, and occasionally like a nip of that brown liquor called bourbon (it is awesome in mint juleps, by the way).  This deliciousness combined all three, and it had been a while since I had any juicy beef, so how could I possibly resist?  I have to say, I was already expecting something good and got something even better…so much YUM! It won’t be long ’til I make these again for my family!
