Stop Spending a Fortune On Store-Bought!

Our local outdoors & sports store is going to take a massive financial hit now that I have this awesome recipe for homemade beef jerky!

My husband practically eats beef jerky for breakfast, lunch and dinner. So far he has picked up his favorite brand from that local store of ours, but after I made this the first time he said there’s no going back. I have to admit; I’ve never been that big of a fan of beef jerky but this one was super delicious!

Don’t worry if you don’t have a dehydrator. Yes, it would come in handy when making this, but you can make this in your oven, too! In fact, that’s how I did it and it turned out perfect. I did check on it a few times while cooking, and you should too. Even though you’ll get instructions on the temperature and time, all ovens are a little bit different and you can also adjust the time based on how you like your beef jerky.

Feel free to adjust the seasonings, too, but I would highly recommend trying the recipe as is, first. For us it was perfect!

Oh Em Gee, These Are Incredible!

I’m so excited about today’s recipe that I almost can’t sit still! I’m crazy about potatoes, any way you make’m, so I have collected a vast amount of potato recipes over the years. I didn’t think it was possible to top them – you see, I figured I had already found and perfected the best of the best recipes out there. It turns out I was wrong, and I’m actually really happy about that!

I came across this caramelized roasted potatoes recipe on Vegan Food Lover’s channel, and it is TO DIE FOR. Honestly, I could eat these potatoes seven days a week and twice on Sunday! Vegan Food Lover really has found a heavenly combination of ingredients for that marinade – and I didn’t even realize you could marinate potatoes!

I highly recommend checking out all of his recipes; that’s what I’ve been doing for the past couple of days, and I’ve found quite a few favorites already. Let’s just say I’m going to pamper my family with these incredible dishes for the next couple of weeks, and you all should do the same!

Sometimes my meals tend to get a little boring and my husband kindly gives me a hint; “Maybe we could have something hot and spicy for dinner this week?” I can’t blame him – I get bored of the same ol’ dinner recipes, too, and that’s when I usually bring out all the “special” recipe notebooks! If you ask me, “special” is any food that my mother never made when we were kids!

Now, there was absolutely nothing wrong with my mother’s recipes. To say I was a little surprised when I first heard of making pork roast in the slow cooker, is an understatement. It had never even crossed my mind that you could actually cook roast in the crock pot. I had my doubts about it; would it turn out dry? Or even worse; a soggy mess? I was too curious not to try!

Chicken This Tasty Must Be Illegal!

If there’s one thing I’m grateful for, it’s that I have been fortunate enough to visit Hawaii. It took a lot of planning and saving but it was so worth it! What I’ve noticed later on is that it’s impossible to explain the aloha to someone who hasn’t been there to experience it. I guess you could say it’s every single positive thing you can think of put together, multiplied with love and then divided by the amount of people living on the islands. I’ve never felt so welcome and so at home before, or since, during my travels.

However, there is another thing about Hawaii that I can make people understand, and that’s food. Oh my goodness, it’s so delicious! Hawaiian cuisine, just like the people living there, is a mixture of different cultures and tropical flavors. The ingredients are fresh and tasty, and every meal makes you feel like it’s the best thing you’ve ever had in your entire life. That’s why I had such high hopes for this recipe – and I certainly wasn’t disappointed when I tried it!

I have finally admitted it to myself. I need to shed a couple of pounds. And by “couple” I mean about twelve. That wouldn’t be so bad but, you know, I just love food!

Ahh pork. The one meat I grew up on exclusively. Sure, there were occasions for chicken and even rarer occasions for beef, but the majority of the time we had pork. I mean, I grew up in a Cuban household. That means you have pork rinds, pork chunks, pork belly, pork loins and pork chops on rotation, constantly! It was definitely delicious, but sometimes, we had it too often.

 

To add to it all, family parties, Christmas and Thanksgiving (including holidays like Mother’s Day and Father’s Day) included a whole roast pig. I mean, we roast it in what we call a “caja china” which translates to Chinese box. I do not know why it is called that, but it is a long wooden box where it cooks over the course of the day. Well, when it is ready, we all pick off the crispy pork skin until it is gone and then sit down to eat rice beans and pork or pulled pork sandwiches. Served with a side of sweet fried plantains or Cuban bread, we had meals for the whole week! We definitely over did it and I was certain I would never cook pork again… until I came across this recipe!
