One thing I love about living in Miami is that it is a very diverse culture around here. So many different kinds of people with so many different backgrounds. Everyone is happy to be in America, but proud of where they came from. We love to talk about the similarities and differences in our lives from schooling to marriage, to religion, to FOOD. Oh man, we just love the food from all of our different cultures. One of our favorite things to do is to get together, each of us bringing a dish from our culture or country and then we share why or how it is significant to us.

 

We recently had one of those days at work where we all bring different foods. I brought Black Beans because we Cubans make them differently than any other country. All countries have their style of beans but we just do it differently – so as odd as it is, I brought some white rice and a container of black beans for everyone to try. My friend Sue is Asian and she brought meatballs. I laughed when she said that because meatballs are typically Italian, but she said these were not in any way, shape, or form like those.

Meat and cranberry… Perhaps not a combination I would have thought of, but certainly one that will be a favorite of mine from now on! These little morsels will please any guest, with a refreshing and tartly sweet aftertaste, you’ll have to hide the serving trays, to save room for dinner! Better yet – have someone hide it for you. Otherwise you’ll just eat all of them yourself…

You can leave out the chili sauce and use a jar of grape jelly, if the spice bothers you. Although, if you ask me, the chili brings the perfect touch to these meatballs and it works incredibly well with the cranberry flavors. But it’s completely up to you – just make sure you heavily season the meatballs, to still enrich it with a salty-sweet flavor profile.  Don’t skimp on the garnish…it practically makes the whole plate dance!

Meatloaf is a popular family dinner item for a reason. My favorite thing about it is that it’s easy to double the recipe and make enough to feed even a larger group for two days. Sometimes, however, it can become a bit boring or “blah.”  Solve that problem and liven up your meatloaf night with this Bacon-Wrapped Meatloaf recipe! It’ll be a huge hit and your family will beg you to make it again soon.

 

Meatloaf can be a hearty and satisfying main course, particularly when paired with some yummy potatoes and beans.  Some recipes out there just miss the mark a bit, though, at least in my opinion, and even a good, tried-and-true recipe can become a bit of a yawner, after a while.  This recipe certainly isn’t boring.  After making one small adjustment, I thought that it came out beautifully.

One Of Our Favorite Meatball Recipes, Back By Popular Demand

These Cranberry Meatballs pack a lot of flavors and would be great as a party appetizer or as part of a full meal.  And since they stand out a bit from the crowd, they are sure to be remembered (and remembered well). I have done meatballs plenty of different ways, but I hadn’t tried them this way before. Normally, I only think of cranberry (and cranberry sauce in particular) as something for desserts or for certain holiday dishes, but I have to say that it works very well here for something that can be served most any time of year.

That nice sweet and sour combination works well with so many things! My husband had his doubts about these when he heard what’s in them… He’s like that, whenever I’m making something that he thinks is a bit too experimental!

Well, I got the last laugh when he ended up going for a third helping!
