If you ask my husband, a meal isn’t a meal unless it includes some kind of meat. Don’t get me wrong, he does like salads and all kinds of veggies as a side dish, but he is not a fan of all-vegetarian dinners… Although I was able to trick him once with a veggie lasagna, haha! You guys need to remind me to share that recipe at some point!

Anyways, the man does like his protein in the form of chicken, pork or beef, so I’ve collected some nice, easy-to-make recipes that I make when I want to pamper him or say thank you for the hard work he is doing, to provide for our family.

These 5 beef recipes were actually chosen by him – he said if I’m going to put together a list, it would be “a disaster to leave any of these out”. And I know he’s right! This may be a basic pot roast recipe but trust me, there is nothing “basic” about it!

Even the smell of pot roast cooking in the kitchen brings back feelings of nostalgia for me. Growing up, my mother would prepare either a pot or oven roast for our family every Sunday. She would get the roast cooking in the wee hours of the morning so that it would be ready for church. I can remember laying in bed in the darkness and waking up to the aroma wafting upstairs to my room. Some may wake up to freshly brewed coffee but we woke up to pot roast cooking.

This Really Melts In Your Mouth

I still remember it like it was yesterday. The first time my mother-in-law came over for dinner! I was terrified and excited at the same time. Excited, because she is such a wonderful person and I couldn’t wait to see what she thought of our new home. Terrified, because she is also an excellent cook, and I didn’t want to look bad serving her a mediocre, homemade meal. Nope, it had to be something special. I turned to my husband and asked what her mother’s favorite dish was.

Of course, right then and there I realized it had been a mistake. Her favorite dish turned out to be pot roast, and I had never managed to cook it the way it’s supposed to be done. It had always turned out kind of dry, or just plain and tasteless for me.

Fortunately, I had two whole weeks to practice before her visit. I must have made pot roast 3 times during that time! But it was well worth it, since I finally ended up with this amazing recipe. The dinner was a huge success and my mother-in-law really liked this pot roast. I’m sure you will, too!

Is there anything more American than a county pot roast? Well, there’s apple pie, baseball, and macaroni and cheese. LOL Seriously, though, pot roast is such a wonderful meal and it is so easy to make. You can make your roast in the oven, in a pot left to simmer on the stove, or my personal favorite, the slow cooker. Which method is your favorite? My mother would put her roast in a  roaster pan and let it cook on low heat in the oven while we were at church. When we’d arrive home the roast would be ready to eat and it smelled so good! I liked my mom’s method because the outside of the roast would be browned and crisp while the inside was tender and meaty. Yum!

The method we are using in this recipe is the Crock Pot method and although the outside of the meat doesn’t get crisp, the roast is still wildly appetizing. The meat literally falls apart once it is done cooking. The veggies roast up perfectly and taste like meat drippings. it’s the perfect meal. I hope you and your family enjoy this simple recipe as much as I do 🙂

Are You Interested In Eating The Best Darn Pot Roast This Side Of The Mississippi?

One of my most favorite meals that I can recall when I was growing up is a beef roast. My mother would always make pot roast for our Sunday dinner after church. I loved how you could smell the roast cooking from outside of the house. I can think of the many times that I knew mom had a roast cooking in the oven while we were at church and my stomach would just rumble. She would add carrots and potatoes to the roaster pan. Those carrots were my favorite!

I have made roasts many ways, myself, especially just like my mother’s. However, I find that the slow cooker method is the best. The beef comes out tender and juicy and really flavorful.

Set it and forget it meals are my favorite kind of recipes because you can literally do just that. You don’t have to worry about watching an oven or stove top. The crock Pot cooks this beef roast and vegetables to perfection. Enjoy!

Turn the humble same-old, same-old into a family favorite. This Ginger and Orange Glazed Pot Roast puts a great spin on a classic family dinner item, and since the recipe is for your slow cooker, it is super-convenient, as well–no need to worry about burning anything in the oven!

 

Looking back, I can see that Mother really did spoil me for food choices, growing up.  Bad as it sounds, I admit, I remember her pot roast being a bit, well, forgettable.  Not that it was bad–none of her standard meals were ever bad, and her roast always came out rather tender and made a good gravy.  It just didn’t have that “umph” that so many of her other recipes did.  I think that this recipe gives this hearty chunk of beef that “umph”–and thanks to the Crock-Pot, it is about as low-hassle as it gets.
