“What should I do with my leftovers?” is a question that we always ask ourselves after a huge feast.

Here is where casserole dishes come to the rescue. They allow us to transform our leftovers into something else entirely- dishes that taste flavorful and savory. In our household, we always have leftover ham, chicken, or turkey. White turkey is usually made during Thanksgiving, I cook it every time I feel like celebrating something. Whether it’s a milestone in the life of my sons or a good news regarding my husband’s career. More often than not, you can see a turkey in our icebox.

Leftover turkey is usually transformed into sandwiches the next day. Sometimes, it’s transformed into soup. This turkey casserole is a nice change to these dishes. What I love about this casserole the most is that it is easy to make. You can also adjust the taste based on your family’s preferred taste.

I have always loved the holidays primarily because of the food. The big dinner came and went and then you got to graze on leftovers for days. I think that was the best part of Thanksgiving and Christmas feasting.

Stop! Don’t you dare throw those Thanksgiving leftovers away!

Not that I thought any of you would ever do such a crazy thing. I mean, how wasteful would that be? Very! However, there is a dilemma that we all face each year after the big holiday dinner and that is all the leftovers.

What the heck do we do with all of those leftovers?! I mean, you can only eat turkey for so many meals after the fact. My mother used to make a big old pot of turkey noodle soup and it was delish! However, that didn’t tackle the issue of the side dish leftovers.

I’ve found a recipe over on the Dining With Alice website that does tackle this beast. Good ‘ol Alice is quite a gem in the kitchen and she came up with a Thanksgiving leftover casserole. And get this…there are tater tots in it! Your kids will love this hot dish. yeah, I said “hot dish”. Apparently, that is what meals like this are called in Minnesota. I like it 🙂

Put Your Leftover Ham To Good Use And Make This Soup

We cooked a pretty big ham for Christmas. We were expecting friends and family members to come over for dinner and help us destroy it!

Well, they did come over and we had a great time but, apparently I had gotten a little carried away with all the side dishes and desserts, so there was a lot of ham still left in the fridge after a couple of days. Since I can’t bare to throw any food away, and it would have been way too salty for our furry family members, I decided to try a new recipe for it.

I made this beautiful, creamy leftover soup recipe and I immediately knew this was it. Potatoes and ham, and just a few other simple ingredients that we all have in our kitchen – it couldn’t be easier! You could, of course, add whatever vegetables you may have in the fridge, or spice this up the way you want it, but this recipe is very tasty as is. We had enough ham to make a double batch of this, and boy, am I glad we did! This turned out so delicious we could have served it for Christmas instead!

What’s One way to use Those Leftover Eggs? You Won’t Believe it!

You would absolutely never believe that chocolate chip cookies was a way to use up old Easter or hard boiled eggs.

But STOP the presses, because these cookies are chewy, gooey, and best of all?

You’re not wasting food.  You can move entirely out of the conventional box of a simple egg salad or deviled egg.

This recipe takes about 15 minutes to bake and makes about a dozen or so, depending on size.

I made these for my kids, and they said they were super soft and chewy.  I got a thumbs up! 😀

I threw in some walnuts because I like a little chewy and a little crunchy, all in one.

Either way, what an excellent way to reuse hard boiled eggs!

“You seriously cannot taste any egg in these cookies. I promise. They are chewy and soft with crisp outer edges. They have a deep, rich flavor from the brown butter and brown sugar, and they are loaded with 2 kinds of chocolate chips! They have a touch of cinnamon too, which adds such a nice flavor without being overly cinnamony.

Please, do yourself a favor and take a couple of those extra Easter eggs you have laying around, and bake these cookies! Then come back and tell me I’m not crazy after all.”
