How To Make Your Family Happy

The other day I was chatting with my husband on what some of his favorite foods are to eat. I mean, I know most of them but he’s a guy whose tastes seem to be always changing so I thought I’d update my files haha! My husband told me that he had a real hankering for homemade meatballs. I love making meatballs but I hadn’t made them in quite a long time. This recipe is for Italian meatballs and they can be eaten in a variety of ways like in spaghetti or sandwiches.

We opted toe at these meatballs in marinara sauce on hoagie rolls with mozzarella cheese. I had some meatballs leftover so we had them in spaghetti sauce over noodles the following evening.

Don’t you just love it when you can make one meal one night and transform the leftovers into a completely different meal the next? Enjoy!

This Recipe Will Take You Back To Mama’s House

You know what always reminds me of home the most? Meatballs. No matter how far from home I happen to be, I can always get these familiar ingredients and feel like I’m back at my Mom and Dad’s house.

I swear, sometimes making these meatballs makes me feel younger, too! I have so many fun memories from my childhood and this was a meal we always very much looked forward to, my siblings and I. Over the years I have tweaked the recipe just a tiny bit, and my kids love these as much as I always have!

I like to pair these with garlic mashed potatoes and gravy, but these will go together with pretty much anything. Spaghetti? Yum. Dinner rolls? Mmmmm! Potato wedges? Yes, please!

If it was up to my kids and my husband, we would be having these meatballs every week! I always bring the kids along when making these – they love to help me out in the kitchen, and they especially enjoy making meatballs. Which is perfect for me, since they really are a big help!

One thing I love about living in Miami is that it is a very diverse culture around here. So many different kinds of people with so many different backgrounds. Everyone is happy to be in America, but proud of where they came from. We love to talk about the similarities and differences in our lives from schooling to marriage, to religion, to FOOD. Oh man, we just love the food from all of our different cultures. One of our favorite things to do is to get together, each of us bringing a dish from our culture or country and then we share why or how it is significant to us.

 

We recently had one of those days at work where we all bring different foods. I brought Black Beans because we Cubans make them differently than any other country. All countries have their style of beans but we just do it differently – so as odd as it is, I brought some white rice and a container of black beans for everyone to try. My friend Sue is Asian and she brought meatballs. I laughed when she said that because meatballs are typically Italian, but she said these were not in any way, shape, or form like those.

You Won’t Believe What’s In These Meatballs!

Boy, have I had a busy week! Work, appointments, trying to keep myself in shape, and even some surprise guests have kept me busy. I’ve barely had time to cook anything for my husband and I – and I will admit I have even missed a couple of dinners and decided to get take-out instead. However, I hate using lack of time as an excuse to eat junk food. That’s why I have focused on searching for quick and easy recipes lately, and I’m going to share some of the best ones with you.

Today I decided to give you a recipe for one of the easiest and tastiest meatballs I’ve ever come across! You won’t have to bother measuring this and that to put everything together – not at all. Just throw all four of the ingredients into a bowl, mash’em up, scoop, and fry. It really is that simple! My favorite way of serving these is with garlic mashed potatoes and some steamed vegetables. Of course, if you have a favorite recipe for gravy, that’ll be perfect for these, as well!

Even Your Grandma Would Beg For The Recipe

My mother-in-law makes the best meatballs in the world. At least that’s what I always thought!

I also thought I would never ever make her meatballs for dinner, because my recipes couldn’t even come close to the one she was using. It would be kind of embarrassing to serve her meatballs that were only mediocre, so I figured I wouldn’t even try.

But then I came across this recipe! I made these just for myself and my husband, just to see what they’re like. They turned out so tasty, and so different from any of the meatballs I had tried before, that I decided to make these for dinner when my in-laws were coming over. I was so nervous when my mother-in-law took the first bite! But she loved these as much as I did, and she even asked for the recipe! These sweet and sour meatballs are sure to become your favorite, too.

Healthy Chicken Meatballs Doused in Hearty Tomato Sauce

Because this dish is made with ground chicken, it is twice as healthy for you as the traditional plate of meatballs.  Add a tomato sauce with vibrant and nutritious ingredients, and you have a truly delicious dish.

This recipe serves 4-6 people and is ready under 40 minutes.  Serve with a side of crusty garlic bread, for a full and well rounded meal.  Sprinkle with Parmesan cheese as a garnish.
