You Only Need 15 Minutes To Make This!

I used to often order garlic pasta with brown butter at one of my favorite chain restaurants. For a long time, I thought it was the creamiest, most delicious pasta in the world, and I didn’t think it would be possible to find a better recipe (let alone, make it at home!)

However, this creamy avocado pasta recipe proved me wrong! This is much creamier than your typical pasta with brown butter, but I like the difference.

If you want to add a protein to this dish it is nothing to throw a breaded chicken cutlet on top of it, or full a healthier approach a skinless chicken breast, or some steamed clams.

This is a really versatile and tasty dish. The recipe has a prep time of only 15 minutes and it makes three servings.

I have noticed that in our family parties or reunions, kids usually stay away from the huge, rich dishes such as pork chops, roast beef, and grilled fish. They always gravitate towards that one pasta dish that the adults mostly ignore. Spaghetti has established its presence in our family reunion table ever since we were kids; and it seems like it’s going to stay there for the next generations. Spaghetti is a favorite among the kids in the family. My nieces and nephews love it most especially if there are huge meatballs on top of the serving pan. They will always fight for a piece of those! Whenever they come over to my house for sleepover, I make sure that I put those extra large meatballs in there.

 

Lately, I’ve noticed that while they still love spaghetti, their appetite is not as big as before. Some of them still manage to finish their plates full of the spaghetti, but there’s no fight over meatballs anymore, and the pan isn’t as empty as it was before. I guess it’s true that it doesn’t matter how much you love something; sometimes there is a need for a change or a reinvention. I found this recipe that actually helped bring back those appetites. I just tried it in last month’s reunion and it was a huge hit! I just added a few things to give it a little twist – and voila!

This Soup Will Blow Your Mind!

For some time now I have been trying to find a recipe that would fit all three of my “rules”. Don’t even ask me where I came up with the rules… I guess it’s all this hassle over the holidays that made me want to simplify my cooking as well as my whole life.

Anyway, back to the rules! I wanted a recipe that would be easy to put together and as versatile as possible. You know I don’t want to run to the store every time I am missing one silly ingredient! The other thing was that I wanted the dish to be healthy and light, preferably a little spicy, too. I want to get rid of all the chocolate that somehow got stuck to my waistline during Christmas… And finally, I wanted a budget-friendly recipe – something made with inexpensive or even leftover ingredients.

Ladies and gentlemen, this spicy chicken soup ticked all the boxes! It is so versatile you don’t even need exact amounts for the ingredients. Just adjust according to how much of these things you happen to have in the pantry, or how many people are coming over for dinner!

One of my absolute favorite meals growing up was the simple and humble pasta and tuna dish my mom would make. It was just a mix of pasta, tuna, mayo, salt and pepper and then maybe a squeeze of lime. It was so simple, I think I learned to make it when I was about 10. It was too easy to make and kid proof, really. I think I ate it at least once a week. It was straightforward and fun and honestly, just a really good meal after a swim or tennis match.

 

The other day, I was browsing Pinterest and came across this recipe. Tuna Noodle Casserole. Hmm, it sounded SO strange to me. I thought it would be gross and weird, but after giving it a try, I realized it resembled my favorite old food of pasta and tuna. It was an easy and fun treat to make that was so reminiscent of the food of my past. I was so excited after trying it that I ran over to my mom’s house and took some to my siblings. They didn’t want to try it because they thought it was weird, but after a bit of prompting, they did and realized it is delicious!

I can never get enough of pasta; can you? I can eat it all day, all night, and for the rest of my life. I am not kidding! Pasta is on my list of forever faves. My friends know that the only way to coerce me for an impromptu night out is a promise that they will bring me to our favorite Pasta House at the mall the next day.

 

I am not Italian, but I grew up in a quasi-Italian household just because we always had pasta on our table. I remember talking about how my family and I used to sit down every Friday night just to plan about what type of pasta dish we’d have for the weekend. Even now that I have my own house, I carried the tradition with me, except that I do experiments once in a while. Pasta is quite a flexible little thing. You will be surprised that it goes well with almost anything!
