Oh, I am definitely making a double batch, you can count on it!

If you want something a bit fancier than basic mashed potatoes for a good side dish, this Loaded Mashed Potato Casserole may be just right for you. It’s easy to make and loaded with savory flavor.

Hey, sometimes, mashed potatoes are just fine; other times, you want something a little more than that. This is a good dish when you’re in the latter situation. Oh, and did I mention it has cheese and plenty of bacon? Yummy! I can’t think of a dish that wouldn’t be twice as delicious when you add bacon in it – except maybe oatmeal, but I haven’t tried it yet so who knows? Haha!

The first time I ever made this it was a special occasion. My husband loved it so much that he now wants me to make it every week! He has even promised to help me out in the kitchen if I don’t have the time to do it by myself. What I didn’t tell him was that I loved this so much I couldn’t live without having this at least once a week!

Coffee cake is a sweet tooth’s best friend, because it can literally be eaten at any time of day.  Whether you serve it at breakfast with a side of fluffy eggs, or with afternoon coffee/tea, this recipe, is sure to please. Keep this cake covered, as to keep it moist.  It can even be refrigerated, to preserve it longer… but instinct tells me, you may not have that problem after tasting it!

 

When making the topping, I suggest you add the flour gradually. Depending on where you live you may need less or more flour to make a nice, moist crumb topping. Or maybe you like it a bit more on the dry side, I know that’s how I prefer my coffee cake topping! That’s why I always make sure I use enough flour.
