It may not be your typical chicken alfredo recipe, but this Cajun Chicken Alfredo is delicious. It contains just the right amount of spice to wake up the flavor a bit, but the spice is nicely balanced with half and half, so that even people very sensitive to spice will have no trouble enjoying this recipe. I do love Cajun recipes of all types, but ones like these are especially good for midweek nights when you want something really quick and need to keep cleanup to a minimum. I wouldn’t call this traditional alfredo, but it is certainly a yummy one-pot meal!

 

I must say I hesitated for a while when I came across this recipe. I do enjoy Chicken Alfredo as much as I do cajun seasoning, but had never thought of combining the two. Turns out it was a great idea!

This Pumpkin Sausage Bowtie Pasta makes for a creative and festive-looking fall meal, and yet it takes little time to put together. This is a great choice for those midweek fall and winter evenings, when you are particularly pressed for time (and perhaps already thinking about the weekend) and want something seasonal but just don’t have the time or energy to make a really elaborate meal.

 

The splash of white wine is what gives this dish that amazing extra bit of flavor. Stay away from any wine that is super-sweet, or you may have a main course that is a bit TOO sweet. Otherwise, there’s nothing too difficult about this recipe. You do have to brown the sausage and cook the pasta (al dente) to start, but that doesn’t take all that long, and everything goes really quickly after that. You basically have a full meal with this, though it does go nicely with a bit of bread and a simple salad.

Make a Tasty Side For Any Gathering Without Straining Yourself Too Much Doing It

Give that favorite mac salad recipe of yours a new rival with this Hawaiian Macaroni Salad recipe!  It’s incredibly simple to put together and makes for a great side for most any large gathering. To be honest with you, sometimes I have this for lunch on its own, instead of serving it as a side dish! Though perhaps not QUITE as ubiquitous as cole slaw or potato salad, you will see macaroni salad, or “mac salad” as it is often called, at many a tailgate, barbecue, potluck, and picnic across America, particularly in the South.

This Hawaiian mac salad, though very similar to the Southern version of which I am the most familiar, does something a little different with the dressing and makes use of a somewhat different vegetable mixture, so I thought I would give this variation a try.

My husband really enjoyed this version of mac salad and I was super surprised. You see, my hubby is quite particular about his mac salad and he doesn’t like the recipe to be changed up in the least. Welp, he enjoyed this version. Winning!

Want a filling meal for summer but don’t want to spend loads of time by a running stove after you have spent all day dodging the summer heat?  Consider making this Southwestern Chicken Pasta Salad.  Put it together in under half an hour, with little stove heat required (just enough to cook a pound of cut-up skinless boneless chicken).  It makes a bunch and is great for a summer picnic or for those early football tailgates, when it is still rather warm outside.

 

There is plenty to love about good summer cooking.  After a while, though, you can get a little tired of standing by a hot oven or stove (or by a grill in the summer heat).  If you need something to cool you off a bit, a good cold salad does the job well.  (If you are looking for a main course, that is.  I love a bit of ice cream now and then, as I am sure y’all do.)  This recipe takes the basic pasta salad idea and kicks it up a notch, Southwestern-style.  It makes a bunch and is addictively tasty, so be warned!
