Here’s Your Quick Fix To Midweek Madness

Don’t you just love it when you suddenly come across a recipe that basically saves your life that day? It happened to me last week, when I was having one of the worst days ever. I was down with a horrible cold but I couldn’t just stay and rest, because I had to make a deadline and I wasn’t going to slip, unless I died and they didn’t have wi-fi in the grave.

Ok, maybe I was being a little over-dramatic there. But the point is, I was feeling miserable, I didn’t have any extra time, and I couldn’t even think of leaving my house and going to the store. If I had, I probably would have ended up being arrested. Trust me, I looked that bad.

Right then and there something magical happened. I was on Facebook (isn’t that what everyone does when they’re extremely busy with an insane schedule and no time to waste?) and someone had just shared this incredible recipe. With glazed eyes I wrote down the ingredients and immediately realized I wasn’t going to die that day! In fact, I was going to make dinner for the fam, in the middle of all the chaos!

Great for Mexican Monday – or ANY day!

It doesn’t get any easier than this! All you need is a few simple ingredients, a 13×9″ pan and about 40 minutes to get this incredible casserole hot and bubbly on your dinner table! We all know what it’s like to come home to a group of hungry wolves. Or worse; to be a hungry wolf yourself! There’s no time to slave away in the kitchen for hours when your tummy is screaming “Feed me!” My panic button-solution for those days is this stupendous, cheesy burrito casserole.

Not only is it quick and easy to make, but it’s also incredibly delicious. When my kids are “hangry”, all I have to do is tell them I’m making this, and they’ll start behaving like angels. Ok, maybe not angels – but at least they’ll calm down until dinner is ready!

This recipe is enough for 8 servings, depending on how hungry everyone is! I would definitely make a double batch just in case. You can freeze the leftovers, if there are any! Or you could add a layer of taco rice to make sure there’s enough for second servings.

The day I first tried this recipe, it was Cinco de Mayo and I really wanted to eat Mexican food.  My husband is not a fan of Mexican, but he indulged me because he knows how much I love it.  And it was so absolutely worth it.  He loved every bite and even asked for more!  There was nothing left on the plate and he was ecstatic about having it again the following day.  That’s how good it is.

This Dorito Taco Bake recipe looks very festive and has plenty of lively flavor. It’s also a very quick recipe; the prep and baking shouldn’t take you more than an hour. I have to say, a recipe like this is about as family-friendly as it gets. It’s also a rather versatile recipe, with plenty of possible substitutions and optional extras. I have to admit, it may not be the healthiest recipe in the world (at least not as-is), but the kids will love it, and I imagine that you will find a lot to enjoy about it as well (particularly on one of those busy midweek nights).

 

If you want to lighten this recipe up a bit, you can substitute ground turkey for the ground beef or go with low-fat cheese and sour cream. You can also add a layer of refried beans, if you like, or go with tortilla chips instead of Doritos for a bit of a lighter flavor. If you want to experiment with the texture of the dish a bit, you can try baking the crescent rolls for a few minutes before putting the other ingredients in there or hold off on adding the chips until the last 10 minutes of baking.

As far as easy comfort food goes, particularly for the cooler months of the year, it’s hard to beat a good, savory soup. This Easy Taco Soup has a hearty flavor to it, and after a bit of prep,  the slow cooker does the rest of the work for you.

 

After making my second batch of spaghetti meat sauce for the season not too long ago, I was looking for something a little different. (Don’t get me wrong; I love the spaghetti sauce recipe that I adapted from what Mother used to make, but I do like to mix things up, and it would be a shame to get bored with something like that.)  This soup recipe keeps it really easy and low-hassle, and it has some of that Southwestern flavor in which I like to indulge, now and then.

Refreshing Summer Salad, With a Southwestern Twist

Want a filling meal for summer but don’t want to spend loads of time by a running stove after you have spent all day dodging the summer heat?  Consider making this Southwestern Chicken Pasta Salad.  Put it together in under half an hour, with little stove heat required (just enough to cook a pound of cut-up skinless boneless chicken).  It makes a bunch and is great for a summer picnic or for those early football tailgates, when it is still rather warm outside.

 

There is plenty to love about good summer cooking.  After a while, though, you can get a little tired of standing by a hot oven or stove (or by a grill in the summer heat).  If you need something to cool you off a bit, a good cold salad does the job well.  (If you are looking for a main course, that is.  I love a bit of ice cream now and then, as I am sure y’all do.)  This recipe takes the basic pasta salad idea and kicks it up a notch, Southwestern-style.  It makes a bunch and is addictively tasty, so be warned!
