This Super Easy And Delicious Salad Is Good For You!

Wow, do I feel like I could eat a bit lighter after the summer! All those juicy BBQ meals with extra sauce and heavy desserts… And with the holidays coming up, I should definitely watch what I eat for the next couple of weeks, at least. But I don’t want to go on a diet, and I don’t want to start eating “health food”. You know, the stuff that’s supposed to be good for you but doesn’t really taste like it, haha!

I’m just kidding. I know that healthy food is a great thing and that there are actually plenty of dishes that are considered lean and healthy – yet, they taste amazing. What I decided to do to get things started is have more salads. Not the heavy, mayo type of salads but something that’s fresh and tasty.

For example this taco salad from Making Memories With Your Kids. Lovely, fresh iceberg lettuce and tomatoes, great protein from the meat and the beans, and plenty of amazing flavor from the seasonings. I could eat this every day of the week – and maybe I will!

They’ll Have To Drag Me Kicking And Screaming From This Scrumptious Appetizer!

I always look forward to our game nights with family and friends. We’ve had this fun tradition for years now with some of our friends; we take turns hosting each other’s families, and everyone always brings a little something to the party. The hosts make any bigger meals, if that’s what they decide to serve, but whoever’s coming over as a guest will bring an appetizer, a six pack or whatever they think is suitable for the occasion.

Lately I’ve been trying to find a dip that would tickle my fancy. It seems I’ve grown tired of the same old shrimp dips, guacamole or salsa, and I really wanted to bring something super delicious to our next event. As soon as I came across this awesome Tex Mex dip over at Guy’s Home Kitchen, I just knew this would be it!

I am most definitely making a double batch of this goodness because there’s no way my tex mex loving friends would ever settle for one! This is the perfect combination of flavors, if you ask me, and I can’t wait to dip my tortilla chips in this – or maybe I’ll just eat it with a spoon…

Fill Your Belly With This Awesome Twist On A Classic

I’m sure most of you understand what a struggle it is sometimes, trying to manage your work and personal life, while making sure you’re kids are properly dressed and that there’s food on the table. They say it gets easier over time, but I don’t know! It seems to me some teenagers are even pickier than some 5-year-olds… Then again, some teenagers love food so much that I’m having a hard time keeping up with them in the kitchen.

I happen to have both kinds of teens in the house. The other one cringes inside whenever I try to serve a new, out-of-the-ordinary dish. She dares not say anything (smart girl…) but I can see she’s not really enjoying certain meals. My son is completely different. He eats anything and everything – and when I say everything, I really do mean everything. There was once a time when we used to have leftovers in the fridge, but we don’t, anymore.

Trying to keep both of them happy is quite a challenge, and I’m always on the lookout for recipes that are easy on my wallet but also tasty enough for my other teen.

What A Change From Your Plain Ol’ Chicken Recipe!

Do you have Mexican Mondays at your house? We do – well, not always on Mondays but we usually have Mexican food at least once a week. What can I say; my husband and I really like the food and I guess we’ve raised our children the same way! The only issue so far has been that all of our favorite Mexican-style recipes have been filled with cheese. Lots of it.

There’s nothing wrong with cheese, of course, but when you’re trying to eat a little healthier and perhaps even shed a pound or two (or twenty, ahem) you kind of start looking at cheese in a different way. I still want to eat all that ooey-gooey goodness, but I try not to eat it every single day!

This recipe was like hitting the jackpot! It is Weight Watchers-approved, incredibly juicy and flavorful, and absolutely perfect for your Mexican meals. Try serving this with rice, potato wedges or maybe just steamed veggies, for an extra delicious and lean dinner!

With so many taco bake recipes floating around these days, I consider myself to be exceptionally lucky that I came across this one. I, for one, am absolutely head-over-heels for tacos. I love them, and so does my family. However, tacos can sometimes get boring once you’ve had them a time or twenty. So why not try this recipe and mix things up a bit?

 

This recipe isn’t for your regular run-of-the-mill tacos. In fact, you won’t even be eating it with your hands. Shocking, I know. Instead, you’re going to be tossing all of your favorite taco ingredients into a baking dish and create a jazzy Mexican taco bake casserole! I’m telling you; this casserole is uh-mazing. It’s packed with zippy spices, juicy meat, and lots of CHEESE. Yum!

When most people think of a Spanish casserole, they don’t immediately think tater tots, but I say…why not?

They make for the perfectly crispy, and crunchy crust that just adds to the taco-like feel of the dish.

This delicious cheesy casserole, takes out some of the guilt of making tater-tots your main staple at dinner time.

And trust me…you won’t hear ANY complaints from the kids, on this one.

Once you taste this dish, you’ll be thinking up all sorts of ways to eat those favorite tots.

This recipe is obviously a kid pleaser, and is simple and quick to whip up.  

Ready in about 40 minutes, this bubbly and cheesy casserole serves up to 6 people.

Grab your chips and start to dip, in this delicious dish.  Some like it hot and spicy, so if you’re one of those people, you should tuck this recipe away.

Best cooked in a crock pot, this dip goes perfectly with some dark corn tortilla chips, or even as a topping to a spicy Mexican meal.  This recipe generally takes about a half-hour to make, and mere minutes to munch.
