Nothing Beats This Classic Southern Recipe

This Southern Chicken Salad is great for a lunch or light dinner at home, but it also makes a bunch, keeps well for a couple of days in the refrigerator, and is readily expandable, making it a great tailgate, picnic, or potluck option. I also enjoy snacking on this salad for lunch. So yummy – this recipe certainly is a keeper! Chicken salad is one thing that is easy to make but also easy to mess up. This recipe uses just the right amount of mayo and a good balance of sweet and savory flavors to bring everything together beautifully.

Leave it to the southerners to come up with such an amazing recipe. They never seem to fail! And if you want to make this extra healthy, you can leave out the sugar and use low-fat mayonnaise. It will still taste absolutely scrumptious!

If I can recall right, i do beleive thatw e had this chicken salad recipe for my sister’s bridal shower. Yes! Yes, we did! It was so good and we ate it on croissants. Whata  great memory of good food and fun times 🙂

Make a Tasty Side For Any Gathering Without Straining Yourself Too Much Doing It

Give that favorite mac salad recipe of yours a new rival with this Hawaiian Macaroni Salad recipe!  It’s incredibly simple to put together and makes for a great side for most any large gathering. To be honest with you, sometimes I have this for lunch on its own, instead of serving it as a side dish! Though perhaps not QUITE as ubiquitous as cole slaw or potato salad, you will see macaroni salad, or “mac salad” as it is often called, at many a tailgate, barbecue, potluck, and picnic across America, particularly in the South.

This Hawaiian mac salad, though very similar to the Southern version of which I am the most familiar, does something a little different with the dressing and makes use of a somewhat different vegetable mixture, so I thought I would give this variation a try.

My husband really enjoyed this version of mac salad and I was super surprised. You see, my hubby is quite particular about his mac salad and he doesn’t like the recipe to be changed up in the least. Welp, he enjoyed this version. Winning!

My husband is begging me to make these twice a week.

This Buttermilk Fried Chicken is a classically Southern twist on the usual American fried chicken recipe.  It makes for a great main course for lunch or dinner at home, but with the right sides, it also makes for great picnic and tailgate food. My great-grandmother in Bay St. Louis, Mississippi, made some fabulous buttermilk fried chicken.  Alas, she closely guarded all of her best recipes (to the point, in some cases, of going to different grocery stores for different groups of ingredients, so no one person working there would have the full list of ingredients) and would only share them with fellow culinary artists who were very close to her.

Unfortunately, she passed away before I properly got into cooking.  I can’t say for sure that it’s an exact match (time blurs certain details and enhances others), but this buttermilk fried chicken does come close to her old recipe, at the very least, and I assure you that it is quite delicious.

I mean, all you can do is make this recipe for yourself and sample it. I guarantee you won’t be sorry! Grandma certainly knew what she was doing in the kitchen and her recipes prove this sentiment time and time again. Enjoy!

It can be really difficult to put together a salad that is tasty and also very healthy.  This Creamy Broccoli & Bacon Salad recipe allows you to do so with ease.  There is no store-bought dressing in this recipe, but it is a cinch to put together.  You won’t believe that something with bacon in it is this healthy–or that something so delicious and healthy is so easy to put together!

 

I enjoy a nice salad, but sometimes, all of the chopping and other prep involved can be a bit taxing.  And after going through all of that, I often don’t really feel up to making my own dressing for it.  Needless to say, most of the usual store-bought options aren’t exactly all that healthy, and that kind of defeats the point of having a salad in the first place.  This recipe solves those problems very nicely.

Fried food really doesn’t have to be unhealthy.  These Pan-Fried Zucchini Fritters are cooked in olive oil, giving you great flavor with low carbs, a good helping of the “good fat,” and little or none of the bad.  You can make a nice batch in about 20 minutes.  It’s great for a family snack and a tasty choice for your next picnic or tailgate party.

 

Once the rain finally ended and the sun showed itself today, I felt inspired and wanted to find a nice, summery snack to enjoy and share with all of you.  I remembered reading about a lot of culinary enthusiasts looking for different things to do with all of the zucchini that their home-garden “Beasts” were producing this time of year, and this recipe just seemed perfect.  Oh, and remember that Wild Southwest Dip that I told you about recently?  It turns out that it and these zucchini fritters go wonderfully well together.

Refreshing Summer Salad, With a Southwestern Twist

Want a filling meal for summer but don’t want to spend loads of time by a running stove after you have spent all day dodging the summer heat?  Consider making this Southwestern Chicken Pasta Salad.  Put it together in under half an hour, with little stove heat required (just enough to cook a pound of cut-up skinless boneless chicken).  It makes a bunch and is great for a summer picnic or for those early football tailgates, when it is still rather warm outside.

 

There is plenty to love about good summer cooking.  After a while, though, you can get a little tired of standing by a hot oven or stove (or by a grill in the summer heat).  If you need something to cool you off a bit, a good cold salad does the job well.  (If you are looking for a main course, that is.  I love a bit of ice cream now and then, as I am sure y’all do.)  This recipe takes the basic pasta salad idea and kicks it up a notch, Southwestern-style.  It makes a bunch and is addictively tasty, so be warned!
