I can see why this recipe was award-winning!  It’s really hard to believe that something as gourmet-tasting as this Mediterranean Seafood can be put together in only half an hour and be so healthy!

Not very many dishes go straight to my dash of Best Recipes, but this one did! Particularly when fall starts knocking on my door, I start thinking about hearty stews. And seafood is very much in my blood still, even if I am a few hundred miles away from the Gulf waters now.  Needless to say, I was really excited to come upon this little gem.  I couldn’t believe that something this tasty was only about 220 calories for a full serving, not to mention rich with all of those healthy omega-3 fatty acids that I keep hearing such good things about.

 

What surprised me the most was how much my whole family enjoyed this dish! I have two very picky eaters at home, and my husband is not that fond of seafood, either. But all three of them gobbled this up faster than I could say “Bon Appetit!”

These Salmon Croquettes With Creamy Dill Sriracha Dip make for a great party appetizer that people of all ages and tastes will love, but a hearty serving of them also makes for a good main course for a full meal at home.  That unique salmon flavor is still distinct enough in this dish to let you know that it is there, but it is balanced and subdued enough by the other ingredients that even people who aren’t exactly wowed by salmon will find flavors to enjoy.

 

I have to admit, my relationship with salmon wasn’t exactly love at first bite; it was more something that I grew to appreciate over time.  Even in the early days, though, well before I enjoyed salmon as much as I do now, I always liked salmon croquettes when Mother made them.  Yes, the salmon taste is still there, but it’s rather subtle; the other ingredients combine to yield a treat that is well balanced and has depth of savory flavor without being too overpowering in any given direction.

It can be really difficult to put together a salad that is tasty and also very healthy.  This Creamy Broccoli & Bacon Salad recipe allows you to do so with ease.  There is no store-bought dressing in this recipe, but it is a cinch to put together.  You won’t believe that something with bacon in it is this healthy–or that something so delicious and healthy is so easy to put together!

 

I enjoy a nice salad, but sometimes, all of the chopping and other prep involved can be a bit taxing.  And after going through all of that, I often don’t really feel up to making my own dressing for it.  Needless to say, most of the usual store-bought options aren’t exactly all that healthy, and that kind of defeats the point of having a salad in the first place.  This recipe solves those problems very nicely.

Potato Salad Made Easy And Done Just Right

I have more than a few fond memories of eating Mother’s homemade potato salad with a nice plate of barbecued baby back ribs and baked beans.  Though I have come across many varieties of potato salad in my time, yet for that comforting, at-home flavor, I find myself drifting back to the classic Southern version of it that Mother made so well. Though she had to allow for time for the flavors in the salad to settle after making it, I always loved her version far better than the usual store-bought options (which often made use of far too much mustard relative to the other ingredients).

This recipe captures the spirit of what she made from memory so well, I think. This Classic Southern Potato Salad is just the right sort of side for your family barbecue or for a much larger cookout or tailgate.  It has a great flavor and isn’t too difficult to make, either.
