So Easy, You Just Can’t Go Wrong

I have a small vegetable garden in the backyard. It’s nothing fancy, and it isn’t anything like my mother and my grandmother used to have when I was a child. But every year it gets a little bit bigger when I add another interesting veggie I’d like to try growing. Sometimes they turn up fine, sometimes they really don’t – even if I try my best to take care of everything. Watering, weeding, sheltering from the burning sun – sometimes I even talk to my baby veggies…

I guess a great veggie garden is a sum of many things. But I have noticed that there is one vegetable that I couldn’t stop growing, even if I tried! Butternut squash. I have a bunch of these guys just ready and waiting to be picked and turned into something delicious.

Over the years I’ve tried everything made of butternut squash; bread, pizza sauce, pickled, spread… you name it, I’ve tried it. But my favorite stays the same. It’s the butternut squash soup. It is so simple, so quick to prepare, the flavor is amazing and reminds you of all those sunny summer days!

Pamper Your Family With Homemade Dinner Rolls

If you’re anything like me, you’re sometimes feeling guilty for not having enough time to bake your own bread for the family. I love homemade bread – all kinds, but let’s face it. More often than not, the daily chores and activities take up so much of my time that there’s no way I can spend a couple of hours baking. So I turn to store-bought bread, and I’m not happy to see the list of preservatives printed on the package. I’m also not happy to see the grocery bill at the end of the month…

Lately I’ve started experimenting with super quick and easy recipes for bread. Lack of time is my biggest issue so I’ve decided to find out if there are tasty recipes that don’t require hours to put together.

In my family, we don’t eat that much bread in between meals. We do like to have rolls or slices of toast with lunch or dinner, so that’s where I wanted to start my search. When baking with yeast you have to let the dough rise, at least once, and to me that’s a no-no for as long as I have a full-time job and plenty of chores to tackle every day. But I’ve found the perfect solution!

avocado egg salad, bacon, Bertolli, dill, Domino, egg salad, Egg-land's Best, Gold Medal, Hood, Kraft, Land O Lakes, limes, McCormick, Nestle, onions, Ore-Ida, Perdue, Philadelphia, yogurt

And BOY was it a flavorful ceremony!

So many people are scrambling around wondering what to do with those left over eggs from the holiday.

Rather than the typical deviled egg, or normal egg salad with relish, I wanted to check out something different.

Avocado is the perfect solution here, because it has the same consistency as hard boiled eggs.

This recipe is ready in only 15 minutes and serves up to 6 people.

I bet you didn’t realize this recipe is also 100% mayo free!  So healthy is hidden here!

That being said, you can still sprinkle a tiny bit of bacon on the top…shhhhh I won’t tell!

As our friends at Diethood state:

“Avocado Egg Salad – Mayo-free, chunky and delicious egg salad with avocados, crunchy bacon, green onions, dill, lime juice and yogurt. This egg salad can be served as an appetizer, a side dish or as a filling for those delicious sandwiches.”

It can be really difficult to put together a salad that is tasty and also very healthy.  This Creamy Broccoli & Bacon Salad recipe allows you to do so with ease.  There is no store-bought dressing in this recipe, but it is a cinch to put together.  You won’t believe that something with bacon in it is this healthy–or that something so delicious and healthy is so easy to put together!

I enjoy a nice salad, but sometimes, all of the chopping and other prep involved can be a bit taxing.  And after going through all of that, I often don’t really feel up to making my own dressing for it.  Needless to say, most of the usual store-bought options aren’t exactly all that healthy, and that kind of defeats the point of having a salad in the first place.  This recipe solves those problems very nicely.

Quick tip: If you’re taking this to work for your lunch, make the sauce in a separate container and combine with the veggies right before serving, so they won’t get soggy.
