Hands Down, The Most Comforting Meal For The Chilly Nights

There’s nothing I enjoy more than a delicious, hearty soup on a cool fall day. I’m a big fan of this season – I like the cooler weather, the crispy air and the golden shade of autumn sunlight. What I don’t like is the fact that it gets cold inside the house, too. Which is where all kinds of soups come in handy. No, you can’t wear them (at least I wouldn’t recommend that), but a steaming hot bowl of soup will fill your belly and make you feel warm again.

My family doesn’t always agree with me, though! You know how it is with teenagers; I guess soup isn’t a very trendy dish these days. They would rather have tacos, burgers or lasagna – or something else I really can’t even pronounce correctly.

I was determined to make soup, anyway, but I wanted to surprise my family by turning it into something they would actually love to eat. Enter, this incredible tortilla soup!

This is such a brilliant idea and I knew immediately my kids would love it. And they did!

Kids And Adults Alike Are Going To Beg For Seconds!

You won’t believe what I have gotten myself into now! My sister’s two kids are coming over for the weekend while she and her husband are traveling for work.

These two boys, aged 5 and 6, are the most adorable and lovely kids ever, but they are not exactly very adventurous when it comes to food. My sister has been struggling, trying to find them new foods to eat, since it does seem occasionally that all they like is cheese. Somehow I blurted out; “Twenty bucks says I can make them love fish” – and now she is absolutely certain I will fail…

Maybe I was a little overconfident, but I have a special trick up my sleeve that my sister doesn’t know about. You see, I’ve found the recipe to the tastiest salmon cakes on the planet, and I’m pretty sure the boys are going to fall in love with these, without even realizing what they’re made of!

Who Would Have Thought You Could Make Nutella At Home?

If there’s one thing in this world I can’t live without, it has to be Nutella. Apart from my husband, of course – although I would have a hard time deciding between the two, haha! The world famous concoction is so popular that you can probably get it pretty much anywhere you travel these days. And I’ve heard people refer to all kinds of chocolaty and nutty spreads by that name! I have to say, to me Nutella is one of a kind – but this homemade copycat recipe comes pretty darn close!

I was so surprised when I first tried this. I wasn’t expecting this to have such an authentic flavor that even I, the biggest Nutella fan in the world, might not know the difference between this and the original.

The best thing about this is that I can start experimenting with all kinds of special flavors. You only need to tweak the recipe a tiny little bit, to get completely new aromas. That is, of course, if you’re willing to make changes to the real thing. I intend to give plenty of tweaks a try – but for now I’m just happy that I can make my own Nutella and be 100% sure of what goes in it!

The tastiest carrot cake you’ll EVER make.

You’ll never guess how old I was when I had a taste of carrot cake for the first time. I was in my twenties! I know – it’s crazy that I had managed to live my life completely unaware of this amazing cake.

I can tell you, once I had tried it, there was no going back. It was pure love at first sight (and bite), and over the years I’ve tried so many carrot cake recipes that I’ve lost count. They’ve all been yummy, and I don’t think it’s possible to find a carrot cake I didn’t like. However, I still keep trying new recipes because sometimes that leads to amazing results.

That’s exactly what happened when I made this carrot cake. This is a very traditional, classic recipe and I have no idea what it is that made this turn out so mind-blowing! The ingredients are all familiar, so I think it must be that the ratio of these ingredients is just absolutely perfect in this one.

Whatever the case, I would highly recommend giving this recipe a try! It might be the only one you’ll ever need!

You May Not Need An Entree When You’re Serving These Awesome Green Beans

I don’t care too much for complicated side dishes. It seems to me these days I’m happy if I have enough time to make a proper entree, so a side dish to me is usually a bunch of plum tomatoes, each cut in half.

I guess that’s why I love green beans so much. It really doesn’t get much easier than that! We’ve had them pretty often lately, not just because they’re tasty and good for you, but also because you can whip them up in no time. My husband was getting a little tired of them… so I had to figure out a way to amp them up without turning them into one of those complicated side dishes I try to avoid.

This recipe is perfect! You really don’t have to do much else than fry the sliced onion and you’re almost done. You heard me! Then you just sit back for a few minutes, with your glass of wine, while the green beans are cooking. Now, that’s my kinda recipe!

Once every two weeks or so I get a request from my little one to “please mommy make the cabin dinner again”

The first time she said that, I had no idea what she was talking about. I mean, sure – the meals I make are not exactly Michelin star restaurant-style, if you know what I mean, but I wouldn’t actually call them cabin meals, either. To me it sounded like something that comes out of a box when you’re on a flight to a tropical destination. And NOT in first class.

After a couple of questions I was able to find out it was cottage pie she so desperately wanted me to make! It really has become her favorite meal, and whenever we are having mashed potatoes it goes without saying that there will be cottage pie the next day.

Sometimes I even have to make mashed potatoes just for this dish – I don’t mind, because I see how much she loves it. I’ve tried several recipes and this one never fails. I would highly recommend making a double batch – you’re going to want to have some leftovers for lunch the next day!

If you have been reading my recipes for any while now, you probably already know I am Cuban. Well, I was born in Canton, Ohio but my parents are Cuban. We eat loads of Cuban food, listen to lots of Cuban music and well, live a traditional Cuban life. It is fun and exciting and there are so many new adventures daily because our lives are just like that. There is so much to look forward to and with 4 other siblings, there is just always something going on!

 

Now, a few years have passed since I lived in that crazy Cuban household and I am married now, living with my husband. My husband’s father is Cuban, mother is Venezuelan and step-mother is Puerto Rican. Talk about diversity! Now, they all cook amazingly, but my step-mother in law makes some amazing food every single time we are over to visit. Whether it is Christmas or any other holiday, or just a night we go over to hang out, my step-mother in law is cooking traditional rice and beans with meat and tamales. There is just one other thing that she makes that she saves for special occasions and it is just amazing!
