Bring Back The Vacay Mood Without Even Leaving Your Kitchen!

I remember when I first landed on the beautiful island of Maui and stepped out of the airplane with my husband. All those exotic scents and flavors lingering in the air when we walked in the airport lobby… I knew immediately that this was a place I would have to return to, some day. You could feel the aloha, and that’s something I haven’t been able to explain clearly to anyone.

It was and still is the best vacation ever; the people were amazing and friendly, the weather was incredible, and the food! Oh yes, the food was to die for. I soon lost count of how many restaurants we tried, every one of them better than the last one. Whatever you wanted to eat, they had just the right place for it!

I often feel like bringing back those memories and flavors so I’ve collected a bunch of Hawaiian style recipes. This Hawaiian chicken is one of my favorites; it’s super easy to make, and it’s absolutely mouthwatering.

Saucy and slow-cooked, there’s need to convince anyone how delicious these wings are.

If you’re anything like my family, we love a good game day, and these wings are perfect!

Of course, this recipe works brilliantly on any occasion, so why not whip it up today?

One thing is for certain, though…..make sure you have plenty of napkins on hand…or if you’re like my family….wet face cloths.

Even though these wings take about 15 minutes to prep, makes sure you leave plenty of time to marinate.

The longer marination, the better, but I recommend about 5 hours prior to cooking/grilling.

My kids love these as they are….unlike buffalo wings, there’s really no need to serve this with a side of anything.

Marrying sweet and spicy flavor notes, they make for a refreshing take, on a game-day treat. This dish is not only sweet and spicy, it is also a little sour, which makes for the perfect combination. My oldest son love chicken wings. He is one of my pickier eaters so I am always amazed that he likes chicken wings. He loves them so much he cleans them down to the bone, as any chicken wing eater should do, and so I wanted to see if he would try something different, and try these Thai sticky chicken wings I came up with.

I have to say, I can’t think of anyone who doesn’t like these wings. Picky eater or not!

My husband is begging me to make these twice a week.

This Buttermilk Fried Chicken is a classically Southern twist on the usual American fried chicken recipe.  It makes for a great main course for lunch or dinner at home, but with the right sides, it also makes for great picnic and tailgate food. My great-grandmother in Bay St. Louis, Mississippi, made some fabulous buttermilk fried chicken.  Alas, she closely guarded all of her best recipes (to the point, in some cases, of going to different grocery stores for different groups of ingredients, so no one person working there would have the full list of ingredients) and would only share them with fellow culinary artists who were very close to her.

Unfortunately, she passed away before I properly got into cooking.  I can’t say for sure that it’s an exact match (time blurs certain details and enhances others), but this buttermilk fried chicken does come close to her old recipe, at the very least, and I assure you that it is quite delicious.

I mean, all you can do is make this recipe for yourself and sample it. I guarantee you won’t be sorry! Grandma certainly knew what she was doing in the kitchen and her recipes prove this sentiment time and time again. Enjoy!

Let Me Say It Loud And Clear – Best Wings Ever!

How many recipes have you tried for buffalo wings? I don’t know about you but I’ve tried quite a few of them. They’ve all been “meh, okay” but when I tried these, wow was I surprised! These wings are really worth the small amount of extra effort in preparation.

 

 

After trying out all those recipes I went back to just using the Frank’s Louisiana Hot Sauce with some butter, and tossed the wings when they came out of the fryer. This is a more complex flavor profile – and totally worth these extra steps of prepping the wings with spices before cooking! Also my family likes medium wings so I lessened the Tabasco, but it really adds a great flavor to these wings. I also used some really chunky blue cheese dressing with ours; they where great.

If there is one thing that my husband and I always make for a game night, it’s chicken wings. And if you ask my husband – the spicier, the better! We both enjoy spicy foods but sometimes he wants his portion so spicy, I feel like I need to have a fire extinguisher nearby… Sometimes I make two batches of a dish; a spicy one for me and the kids, and an extra spicy one just for him. However, these wings here were perfect for all of us, without any adjustments!

Can I just say, WOW! These baked honey sriracha wings are really flavorful – and because they are baked, they’re much healthier than the traditional wings. Plus these bad boys have the unique flavor of one of our personal favorites; the infamous Rooster Sauce! The cilantro and butter compliment the sriracha well – these Asian inspired wings will have you the life of your next tailgate party. Just be prepared to share the recipe with every single one of your guests!
