Meat gets so nice and tender in the Crock-Pot!  This Slow-Cooked Balsamic Pork Tenderloin makes a nice gravy, as well, and it’s a rather low-hassle recipe. Easy enough for a busy weeknight meal, fancy enough for a large gathering – that’s what I like about a lot of these recipes for your favorite slow cooker.  I have always been a fan of pork tenderloin for any large meal. It’s a lean cut of meat that easily serves a large group.

 

The recipe is not all that involved, as you will see.  Basically, you put the meat in the slow cooker, dump all of the other ingredients on top of it, cook for the usual six to eight hours, put the meat on a dish to serve, and you have a lot of soft pork with a nice gravy to go over it.  That balsamic vinegar makes for a nice tenderizer and isn’t nearly as over-the-top acidic as some other types of vinegar.

If you need a good, creamy dessert for your next tailgate or home gathering, this Layered Vanilla Crumble makes a bunch and is rather easy to put together. This is the perfect recipe for those days when you want to serve something special, but don’t have the time or energy to spend a lot of time in the kitchen.

 

Even if I can plan things well in advance, I don’t always have the time to make a really elaborate dessert for a group.  This layered vanilla crumble only takes about half an hour of actual prep to prepare a dessert for about 15, with the rest of the time involved just being waiting for it to set in the refrigerator.  And most people, myself included, really like the flavor and the mix of textures in this.  If you like vanilla, you really ought to give this a try.

Have some fried chicken and give it a bit of Asian flair! With this Japanese Mochiko Chicken recipe, you can make this common Hawaiian “bento” and potluck item in the comfort of your own home, wherever you may be. I do enjoy exploring different ways of cooking chicken, particularly Asian-style options, and this is a good Japanese way of doing it, using mochiko (sweet rice flour).  The crust is softer than most recipes for American fried chicken but still very flavorful.

 

Though this recipe is for wings, and that is how you will most often see this recipe used, you can make use of other chicken pieces as well, including most skinless and boneless options.  Oh, and if you are having difficulty finding the mochiko, you can use something else with sweet rice flour in it, such as Bob’s Red Mill 1 to 1 Baking Flour. You may want to increase the amount of soy sauce, egg, and oyster sauce that you use in the batter, if you make that substitution, to keep the batter from being too thick and pasty.

You don’t have to put together everything from scratch to have a tasty and original dessert!  This Orange Creamsicle Cake recipe cleverly combines a couple of mixes with a few basic ingredients to recreate that classic childhood frozen treat in cake form. Pork chops make for a good choice for a great meal.  And you can make these Glazed Pork Chops on a budget–in under half an hour! I enjoy pork chops many ways.  Deep fried is the obvious choice.  If that’s not what you’re looking for, though, using a rub that makes a nice glaze is another excellent option.

 

Though I suspect that the numbers have gone up a bit since Budget Bytes made the cost estimate, I think that under two US dollars per serving is about right. For that matter, if you prefer going with thinner pork chops, you can just cook these on the stove and forget about the oven entirely.  This is one of the tastiest pork chop recipes I’ve tried, and my whole family loves it. No leftovers, ever, unless I make a double batch!

If you want a chicken recipe in which the sauce is a bit thinner and less cheese-heavy but still want something fairly creamy, and you appreciate the zesty flavor given by a little lemon juice (and the extra savory flavor that leaving the skin on gives the chicken), this Baked Lemon Butter Chicken is an excellent choice.  You can have it prepped and cooked in under an hour. One has to admire chicken for its versatility.  And though there are plenty of recipes for boneless, skinless chicken that I love, you can add a lot of flavor to the right recipe by leaving the skin on.

 

I thought adding spinach to this recipe was a nice touch, but that delicious lemon butter sauce would also make for a nice topping for any crisp green vegetables you might like to have on the side.  I think that this chicken also goes nicely with some wild rice.
