Because No-One Likes To Clean Up After Dinner

I’m having a super tight schedule today! I won’t bore you with the details but let’s just say I got up at 5am and I probably won’t be going to bed until midnight, so yeah, busy is the word. Somewhere in between all the craziness I’m supposed to cook dinner for my family – I could just go for takeout but it always makes me feel so guilty!

Instead, I’m going to make one of my favorite, super quick, one pan meals. What I dislike even more than really complicated and time consuming recipes, is the massive clean-up after dinner. So I’ve collected quite an impressive amount of simple recipes that don’t make a mess.

This roasted chicken and vegetables recipe is also a pretty inexpensive one! I often buy a huge batch of chicken thighs when they’re on sale, and then freeze them for later. Then just thaw them in the refrigerator overnight and they are ready to be cooked for dinner the next day.

Now, here’s a recipe I’ve been wanting to share with you forever! This is one of my favorite meals to cook – because I hardly have to cook at all to get this done! It’s perfect for those midweek days when you have to rush out the door again, before you’ve hardly had a chance to step inside after a hard day’s work.

I love setting my slow cooker in the morning, literally forgetting I even did it, and then coming home to a wonderful surprise when all these beautiful aromas greet me at the door.

Sometimes miracles happen and I have time to make pita bread pockets from scratch – I always make a large batch and freeze as many of them as I can, so that I can whip up this crazy easy meal on a busy day again.

But there’s no need to worry if you’re schedule is too full to even think about making your own pita pockets. This grab-and-go meal tastes just as great even if you’re using store-bought ones.

I remember when I first landed on the beautiful island of Maui and stepped out of the airplane with my husband. All those exotic scents and flavors lingering in the air when we walked in the airport lobby… I knew immediately that this was a place I would have to return to, some day. The easiest way to make dinner for the whole family.

I enjoy cooking fancy and festive meals for friends and family. To me, it’s a wonderful way of showing them that I really care about each and every one of them.

I really care about my husband and kids, too, but to be honest with you, on weeknights my meals tend to be a little more casual… Long workdays and schooldays, hobbies and house chores – there just aren’t enough hours in a day to slave away in the kitchen every single night! Thank goodness for my crock pot!

When I got my first slow cooker it was like a gift from God. It made my life so much easier, and I didn’t have to worry about all the hassle that usually comes from making dinner. I collected a good bunch of crock pot recipes and I was good to go!

Over the years I’ve gotten another slow cooker, as well. It’s awesome – I make the main dish in the large one while the dessert is cooking in the other one! My collection of recipes is pretty impressive these days, and this slow cooker chicken meal is one of my family’s favorites.
