This Dish Is Not Only Delicious, It’s Also Good For You!

Boy, am I glad we’re just about done with the Holiday meals! There’s going to be a bunch of leftovers that we still need to go through (who would’ve thought that would feel like a task!) but after that I know I’m definitely going to want to eat a little healthier! I’m not talking about “rabbit food” only, even though I do love a good green salad. I just want to pay more attention to how I can prepare the meals in a healthier, lighter way.

This recipe is a great example of that! I love chicken – unfortunately I often end up frying it in butter or oil, which is delicious but not necessarily good for you. Now, my greatest fear is that trying to prepare healthy dishes would make them dry and tasteless, so I had my doubts when I tried this crunchy baked chicken. I turned out so delicious I knew right then and there that I wouldn’t have to worry about such things!

bacon, bacon chicken, baked bacon chicken, baked chicken, cayenne, chicken, paprika

Everything is better with bacon, and this recipe is no exception.  This casserole is packed with protein and potatoes, so you’ll need a light dessert to follow this dish.

This easy recipe serves 8 and is ready in about 45 minutes.  Becasue it’s such a rich dish, you may want to serve this meal with a light side salad or green veggie, to balance it out.

A Simple Way To Make A Quick Dinner That Your Whole Family Will Love!

This Sweet and Sticky One-Pot Chicken Dinner is a hearty, family-friendly meal, great for people who enjoy the sweeter side of the sweet and savory flavor combination. It is gluten-free, and thanks to the use of honey, molasses, and maple syrup, it keeps the glycemic index on the low side without compromising on the sweet flavor. How’s that for a perfect meal, in every way! Another great thing about this recipe is that you don’t have to worry about slaving away in the kitchen.

There are two basic ways to get little ones who are a bit picky about their vegetables to eat a good helping of them. One way is to add cheese; the other is to crank up the sweetness. This recipe goes with the latter option, and it puts everything together in the form of a yummy sweet and savory one-pot meal, making it all that much more convenient for the cook under pressure.

Argo cornstarch, bake, baked, baked chicken, Baked Lemon Butter Chicken, baking, baking powder, baking soda, barilla pasta, Bertolli extra-virgin olive oil, black pepper, Bob's Red Mill, Borden, brown sugar, butter, buttery, Campbell’s soups, casserole, chicken, chicken broth, chicken dinner, chicken thighs, Chiquita, Clabber Girl, College Inn, Cool Whip, crock pot, Daisy sour cream, dessert, dinner, Dole, domino sugar, eat, Eggland's Best eggs, entree, food, Gold Medal flour, granulated sugar, Green Giant, Hershey, Hodgkin’s Mill, home, home recipe, Jell-O, Jif peanut butter, Johnsonville, keebler, kosher salt, Kraft, Land O Lakes, land o lakes butter, Land O'Lakes, Land O'Lakes butter, lemon butter, Lemon Butter Chicken, Libby, main course, McCormick spices, Morton salt, Pam Cooking Spray, Pepperidge Farm, Philadelphia cream cheese, poultry, Powdered sugar, recipe, Ritz crackers, Sara Lee, Sargento, skin-on, skin-on chicken thighs, slow cooker, Swanson, Swanson chicken broth, Swanson's, Swanson's chicken broth, Thorn Apple Valley, Toll House, TruMoo milk, tyson, vanilla, vanilla extract, Vlasic, Wesson vegetable oil, whipped topping, zest, zesty

If you want a chicken recipe in which the sauce is a bit thinner and less cheese-heavy but still want something fairly creamy, and you appreciate the zesty flavor given by a little lemon juice (and the extra savory flavor that leaving the skin on gives the chicken), this Baked Lemon Butter Chicken is an excellent choice.  You can have it prepped and cooked in under an hour. One has to admire chicken for its versatility.  And though there are plenty of recipes for boneless, skinless chicken that I love, you can add a lot of flavor to the right recipe by leaving the skin on.

I thought adding spinach to this recipe was a nice touch, but that delicious lemon butter sauce would also make for a nice topping for any crisp green vegetables you might like to have on the side.  I think that this chicken also goes nicely with some wild rice.

Argo cornstarch, baked, baked chicken, baking powder, baking soda, barilla pasta, Bertolli extra-virgin olive oil, black pepper, Bob's Red Mill, Borden, brown sugar, Campbell’s soups, casserole, chicken, Chiquita, Clabber Girl, College Inn, Cool Whip, crock pot, Daisy sour cream, dessert, dinner, Dole, domino sugar, eat, Eggland's Best eggs, food, Gold Medal flour, granulated sugar, Green Giant, Hershey, Hodgkin’s Mill, home recipe, Jell-O, Jif peanut butter, Johnsonville, keebler, kosher salt, Kraft, land o lakes butter, Libby, McCormick spices, Morton salt, one-pot, one-pot chicken, one-pot dinner, one-pot meal, Pam Cooking Spray, Pepperidge Farm, Philadelphia cream cheese, Pompeian, Pompeian extra virgin olive oil, Pompeian olive oil, potato, potatoes, Powdered sugar, prosciutto, Prosciutto-Wrapped Ricotta Chicken, recipe, ricotta, ricotta cheese, ricotta stuffed chicken, Ritz crackers, Sara Lee, Sargento, scalloped potatoes, slow cooker, Stuffed Chicken, Thorn Apple Valley, Toll House, TruMoo milk, tyson, vanilla, vanilla extract, Vlasic, Wesson vegetable oil, whipped topping, wrapped chicken

This Prosciutto-Wrapped Ricotta Chicken comes packaged with a delightful potato side, making it a nice one-pot meal – and a rather gourmet one at that. And you can have it ready in about an hour! I love prosciutto rolls as a snack, and they’re absolutely perfect on Triscuits. I have to admit, I hadn’t thought about using them as a part of a fancy chicken dinner.

Thanks to the use of ricotta, you have a nice, creamy flavor to go with the savory herbs and meat, but not so much creaminess that you feel really weighed down.  I suppose that some people might want to cook some sort of simple green vegetable to go with this meal, but with the delicious stuffed chicken, the prosciutto forming a savory crust, and those heavenly scalloped potatoes, I can’t say that you absolutely have to have anything else. This is a dish easy enough to have for a midweek dinner but fancy enough to serve when you have company over.

Quick tip: If you’re serving these to a larger group of people, you can double or even triple the recipe. Just bake them in two or three pans instead of trying to make everything fit into one.
