If you like cinnamon rolls or anything similar, you’ll love this cake. It’s fast-baking, delicious sweetness that makes a bunch.

 

My sister and I had a special relationship with cinnamon rolls, growing up. There was a place close to where we lived that served these giant-sized versions called “CinnaMonsters”–they were delicious. Anyway, let’s just say that I think that making cinnamon rolls into a cake is an excellent idea.

This Southern Caramel Cake is a classic regional twist on the butter cake: light and tender, with a rich caramel icing, all made easily from scratch. You’ll be surprised how quickly you can make this, too.

 

I think that these classic Southern recipes spoil me a bit. You think that making a cake from scratch has to be an involved affair, and then you see a recipe that gets you from raw ingredients to all done in 45 minutes to an hour. It’s just lovely!

This Sock It To Me Cake is basically a bundt cake with a nice twist. The bulk of the cake is light and buttery, but it has a lovely, rich filling on the inside and is topped with a delicious but easy-to-make vanilla lemon glaze.

I loved the depth of flavor of this cake. It’s not that difficult to put together, and though I think that the mix of tastes here make it good for any time of year, the pecans, cinnamon, and ginger in here make it a particularly good cake for autumn and the holidays.

Bundt cakes are a good option when you need something that’s light and quick to make. This Pumpkin Bundt Cake can be prepped and baked in well under an hour, and it comes with a simple but delicious cinnamon glaze.

 

Yes, I have dived full-on into fall baking season and haven’t looked back. This pumpkin bundt cake was incredibly easy and quick to put together but didn’t scrimp on the flavor. Oh, and it’s surprisingly light, too, both in terms of texture and calories. Would you believe that one slice (about the standard one seen in the photo, not any super-thin tease of a slice) is only about 180 calories? For a cake, that’s mighty good!

If you are looking for something festive to serve at a party or just want an extra-special treat for the little ones, this Candy Corn Layer Cake is an excellent choice. It’s filled with that sweet and buttery flavor of the original candy and topped off with a creamy chocolate frosting.

 

I don’t know about you, but Halloween is something of a big production at my home. Basically, we go all out on the orange and purple lighting, ghosts, skeletons, and cobwebs and have a haunted house for the month of October. Have this fancy, great-tasting cake ready in an hour and a half. This Apple Pecan Cream Cheese Cake is great for gatherings or a home treat. Everyone will love all of the fall flavors and varied textures of this cake, especially if you serve it with a bit of ice cream on the side.

 

I do love a fancy cake now and then, but I am not always keen on the fancy hassle. Well, I found this recipe rather straightforward, and there isn’t any fancy equipment required for this. A 9″ x 5″ loaf pan, standard mixer, measuring cups, and an oven in which to bake the cake are about all that you’ll need to get started on this one. And trust me, it is yummy.
