One of the great things about most “Southern comfort” dinner items is that you don’t have to use really expensive ingredients to make a great meal. I have always admired people from the South – it seems they can grab just a few basic ingredients, throw them together and create unbelievable, mind-blowing results! This was one of the first Southern dishes I tried and it was a great one for a beginner. The gravy really does about make itself (with the help of a little cornstarch). It’s a great midweek meal idea.

Just six ingredients, plus salt and pepper, and you can have these Beef Tips With Rice and Gravy on your dinner table. And at 10 minutes to prep and an hour to cook, it’s not back-breaking or really time-consuming to put together. This has been one of my favorite recipes ever since I tried it, and I’m pretty sure it’ll stay in my box of favorites forever!

Quick tip: If you have leftovers, just mix everything together and store in the fridge. This will keep the rice from drying out!

This is another great dose of Southern comfort, made simple with the help of your slow cooker. Other than a little bit of prep involved with making the dumplings (don’t worry, it’s not hard), this Slow Cooker Chicken and Dumplings recipe pretty much consists of dumping it all in and forgetting about it.

 

Mother liked to make a good pot of chicken and dumplings when the weather turned cold (well, cold for the South, anyway), especially when someone in the family was feeling a bit under the weather. And though it never seemed like that difficult a recipe, even cooked on the stove, it’s even easier made in the Crock-Pot.

If you want some fairly quick and easy Southern comfort food for your dinner, this Salisbury steak recipe is a good choice. It comes with a delicious gravy and yummy caramelized onions, and you can have all of it ready in an hour or less.

Think of salisbury steak as a really fancied up version of hamburger steak. (Something very similar to this was one of Mother’s midweek go-to main courses, when I was growing up, and I have continued the tradition.) You’ll often see some version of this in frozen TV dinners and the like, but don’t be fooled: None of that mass-produced, store-bought stuff can hold a candle to this.

And with such a straightforward recipe that you can complete in an hour, why settle for less than homemade?

A Nice Punch of Southern Comfort

This Sock It To Me Cake is basically a bundt cake with a nice twist. The bulk of the cake is light and buttery, but it has a lovely, rich filling on the inside and is topped with a delicious but easy-to-make vanilla lemon glaze.

I loved the depth of flavor of this cake. It’s not that difficult to put together, and though I think that the mix of tastes here make it good for any time of year, the pecans, cinnamon, and ginger in here make it a particularly good cake for autumn and the holidays.

They Won’t Believe You Made This in Your Slow Cooker!

This Slow-Cooker Blackberry Cobbler makes for a lovely summer dessert.  It may not be the way that your grandmother made it, but adapting it to the slow-cooker makes it very low-hassle and accessible to the person on the go.  Enjoy this fruity and delicious helping of Southern comfort the easy way.

I have fond memories of eating this tasty dessert during those famously hot and humid summers on the Gulf Coast.  There were some really good-sized blackberry bushes behind where I lived as a teen, and if the neighbor kids and I were willing to take the time to pick them (you had to be careful to check for snakes and not scratch yourself on the brambles), we were rewarded for our efforts with a nice helping of blackberry cobbler that my next-door neighbor would make for all of us.

Of course, she made it the old-fashioned way, but I was eager to break out the Crock-Pot and give this recipe a go.  I was very pleased with the results.

Get Rid Of The Weeknight Blues With This Taste Bud Tantalizing Casserole

This simple but tasty Chicken Spaghetti Casserole is a delicious Southern classic–comfort food at its finest. This slice of the South is great for an easy but filling meal with the family but also a great go-to for your next potluck.

Would it be wrong to call this “soul food”?  It certainly is soul food for me.  In any event, it is delicious comfort food! Grandmother didn’t do much in the way of fancy cooking (Mother was more the experimenter and culinary explorer), but she did a number of classic Southern recipes very well; chicken spaghetti casserole was one of them. I remember eating this many times when I was little, visiting her home in the quaint Southern town of Hazlehurst, Mississippi, and rare was the occasion when I didn’t ask for seconds. (It is a mother’s job to protect and set down the rules and a grandmother’s job to indulge, am I right?)

I had wandered on to other cooking adventures and lost this recipe for a long time, unfortunately, but thanks to The Pioneer Woman‘s Ree Drummond and The Food Network, I was able to bring it to my dinner table again. Color me very grateful.
