Casseroles make weeknight dinners a whole lot easier to put together. This Stuffed Cabbage Casserole is on the leaner and healthier side but still packs a nice cheesy and savory flavor. You have to love one-pot dinners that are ready in half an hour, taste great, and give you plenty of vitamins, dietary fiber, and lean protein without overdoing the less-healthy stuff. Suffice it to say, I will be making this one again. It’s a good go-to meal for the busier days, and of course a one-pot dinner means less cleanup afterwards!

 

Whenever I have more time I use fresh onion, garlic and herbs instead of powders, but it’ll be delicious either way. I also like to make a larger portion so that I’ll have enough leftovers for the next couple of days – they reheat beautifully so that’ll make lunch so much easier for me!

Stromboli is what you could call a sort of pizza sandwich – or just a stuffed pizza, with the toppings on the inside. As-is, it’s a five-ingredient recipe, though of course you could tweak it according to your tastes. Putting it together is basically a one-two process – about as simple as it gets! This Easy Stromboli recipe makes for great party food or a quick and easy midweek dinner item. It only takes about 35 minutes to have it ready, and it’s really easy to put together.

 

Even though it’s basically the same ingredients you would use for a pizza, somehow it tastes totally different. Perhaps it’s because the toppings (or should I say, fillings) bake so wonderfully inside the dough. I love adding veggies to the mix – and my husbands favorite for these is definitely jalapenos!

Tater tots make for a nice side option for a lot of meals, but if you want something similar but healthier, or if you just want to mix things up a bit, these Zucchini Tater Tots are a good option, and you only need five ingredients (plus a bit of salt and pepper) to make them.

 

I know that it isn’t properly zucchini season anymore, but I still have a soft spot for this vegetable and like to make good use of it when I can. It will take 45 minutes max to put this together, and with a food processor, you can speed it up a lot more, as these zucchini tots only take about 18 minutes to bake. In addition to being a good, healthy side dish, they also make for great party or tailgate food and taste good even at room temperature.

This Chicken Black Bean Taco Bake is another great Mexican-inspired recipe for those hectic midweek nights. With a few simple cheats, you can have a great-tasting dinner ready in about half an hour! The cheese lovers in your family will go wild over this one, I think. Granted, it doesn’t skimp on the meat, either. It’s a quick and easy recipe but still manages to be rather hearty and filling.

 

Though you are welcome to cook chicken on your own, the easiest thing to do for a recipe like this is to buy a nice rotisserie chicken and shred that up. It minimizes the hassle, and it’s already nicely seasoned for a savory, creamy, cheese-rich recipe such as this. I do recommend investing in a good iron skillet if you don’t have one already; they last forever (the one I have has been in the family for over 100 years and is still going strong) and are great when you need really even heating or if you need to do transfers between stove and oven, such as this.

If you have a hankering for a nice meat pie, this Deep Dish Cowboy Quiche is a nice, savory choice. It preps in half an hour, bakes in an hour, and makes about ten hearty servings. Quiche recipes can sometimes have, well, too much crust relative to the filling. This recipe solves that problem by giving the quiche a nice deep dish upgrade. If you like bacon and cheese, you’ll enjoy this recipe.

 

You have to be a bit patient with the onions and not rush the caramelizing process, and you also want to take care not to overcook the bacon, but you do not have to be a master chef to put this together. The flavor is well worth the wait, too, though of course you can add whatever other (cooked) meat or chopped veggies that you like to the mix. Enjoy!
