Christmas morning just got a whole lot better with this casserole on the table.

My husband and I are not morning people whatsoever.  We hate getting up early and even more so, as much as we are absolutely starving almost instantly when we wake up, we detest making breakfast because it just takes so long.  We have made it (an almost unhealthy) habit to get up, make our bed, throw on a t-shirt and shorts and head out to breakfast in our area.  We’ll go to a Cuban bakery or a French café, but we never eat at home.

As of late, though, we’ve really been wanting to kick these habits.  We are always spending so much money and eating really fatty foods that have made us gain between 10-15 pounds in the last year.  It really isn’t helping our wallet or waists.  So, as usual, I asked my best friend Pinterest for some help.  And guess what?

Once again, it did not fail.  I found so many recipes, but my favorite so far has been this one.  It is a sausage, hash brown breakfast casserole with every delicious flavor you would want to enjoy for breakfast.  Now, I will admit, although it is cheaper, it does not mean it is healthier.  It is still pretty fatty as well. But mmm, so so good!

About a week ago, my husband and I went to chilly New York City.

Being a southern girl from Florida, my blood was definitely not ready for the climate change.  It resulted in wet and cold toes I could no longer feel, chapped lips and my hair all in knots from the wind.  We were walking in the rain getting soaked when we decided we’d walk into the very next restaurant we would run into.  We found a diner and guess what they served…

Yep, French Toast Casserole.  It was a delicious bake where the tops were toasty and had a little crunch, but the insides were nice and warm and soft.  The brown sugar streusel over the top was the perfect addition.  This was just what we needed to warm up on that chilly morning. So, as soon as I got home, I set out to find the perfect recipe, and here it is!  The creators of this recipe knew exactly what they were doing when they were putting it together.  This is the perfect Christmas morning breakfast.  It might even turn out to be a tradition for you, year after year as your kids and grandkids grow older.

You know what? I am really tired of oatmeal. I know about all the health benefits and I know how it’s a part of a balanced diet and all that stuff.

And yes, I do like the taste – especially when combined with all kinds of lovely fruits and other toppings. But after a long winter of trying to eat healthily and religiously sticking to my diet, I am honestly just so sick and tired of oatmeal. There, I said it. I must be a bad person! I just won’t let myself feel guilty for making changes to my breakfast routine.

Otherwise, I may end up not having breakfast at all, and that’s never a good thing. So here’s what I’ve been having for breakfast for two days in a row!

These will definitely get your day started right – and if you’d rather have oatmeal for breakfast, just make these for lunch instead!

I love a good loaf of bread for breakfast.  Growing up, we always lived with my grandma who prepared us a traditional Cuban breakfast almost everyday: Cuban bread toasted or pressed lathered in butter with a “café con leche” which translates to Coffee and Milk.  Our “café con leche” is a steaming cup of milk with a shot or two of espresso and then sweetened with sugar.  It is definitely not the most nutritious breakfast, but it certainly is delicious! 

Now that I live on my own, I am always looking to have something that reminds me of my past.  I am addicted to Cuban bread and café con leche, but I know I need to have something a little more filling and that will give me energy for the day.  That is why I am always on the lookout for new recipes that are a mix of bread with good breakfast foods such as eggs and bacon.  You will not believe how ecstatic I was when I discovered this recipe! This is a loaf of bread that has scrambled eggs and bacon in it.  You can do so much with this to switch it up and make it your own.

This Kid-Approved Breakfast Is Going To Rock Your World

We all know what a struggle it can be, trying to cook a nice breakfast for the whole family before everyone heads out to work and school…

I loved pancakes for breakfast as a kid. My mom usually only made them on the weekends when we had no school. It was something I always looked forward to. And she made them from scratch, not out of the box. No lazy pancakes in our house!
