We all know what a struggle it can be, trying to cook a nice breakfast for the whole family before everyone heads out to work and school…

Sometimes I feel guilty for not eating breakfast at all, other times I just grab something that I know isn’t really good for me. I was searching for breakfast recipes that would be easy to make and wouldn’t require a bunch of weird ingredients that I never have in the pantry, anyway!

This ham frittata is the answer to my prayers! The preparations only take a couple of minutes – I mean, literally, two minutes, so I can throw it into the oven as soon as I’ve opened my eyes and then go take a shower and get ready. This is also such a versatile recipe that you don’t have to worry if you’re missing some of the ingredients. As long as you have eggs, you can throw in pretty much anything you have at hand!
