I’ve always been a big fan of mixing and matching all kinds of things. Clothing, cross-over music, green eye-shadow with blue mascara… ok, let’s not go there.

I know “the youngsters” are really into all kinds of 80’s stuff but I’ve done it once and I’d rather leave it at that. Back to mixing and matching but let’s talk about food!

I love different cultures and especially the variety of dishes people make all over the world. I’ve often thought, I wish there was a way to combine the best of the best, and turn them into the ultimate meal! Well, who says you can’t do it? This recipe sure does it in the tastiest way possible! Ladies and gents, these pizza-dillas are amazing. They are exactly what you need in your life right now, and you don’t have to worry about your calorie intake since these are pretty lean, believe it or not!

You Only Need One Skillet For This Casserole!

Wowza! Now here’s what I call a meatlover’s dream dish! This pizza style pasta casserole in a skillet is probably on your husband’s dinner wish list – or it will be, the second you show him that ingredient list. Spicy Italian sausage… Bacon… Pepperoni… My mouth is watering already, and I haven’t even started with the cheese and marinara sauce!

This is such a quick and easy recipe. You’ll get all those yummy pizza flavors and it only takes 30 minutes! I don’t know about you but I’ve never been able to make a pizza from scratch in just half an hour. Of course, just like with regular pizza, you can add more of your favorite toppings, use different cheese or sprinkle some more of that delicious oregano on top after broiling. I always add a little bit of extra cheese – who could resist that golden, delicious, gooey stuff on top of this incredible casserole?

One of the things I love to do is try to recreate the dishes that my family finds most enjoyable when we eat out. I take it a step further by trying to recreate the recipe on a budget. One of the most challenging, but most rewarding, recipes was this cast iron buffalo chicken and bacon pizza. The original recipe was found at a local pizza restaurant in Alabama called Buck’s. We tried it while I was pregnant and it took until my son was 3 to nail all the flavors.

 

Though I am sure it is not 100% identical to the amazing pizza we first tried in that sleepy Alabama town, it comes very close. You can create this yourself with a cast iron skillet, chicken, bacon, and a few other key ingredients. The prep time takes about 15 minutes and the cook time takes 30 minutes.

Quick Tip: Don’t use a traditional buffalo sauce of hot sauce and butter. The butter will cause the pizza dough to be damp and mushy and give a raw feel to the pizza.

Thinking about heading out to your local pizza joint tonight? Forget about it! You can easily knock together a few ingredients for the best pizza that’s ever touched your tongue. Not only is this pizza packed with flavorful spices, cheese, and veggies, it’s neatly compacted into a loaf, making it the best creation since sliced bread…er…pizza rolls. Sprinkle a little parmesan cheese or, “Farmer John cheese,” as my kids used to call it when they were little, and perfection is made.

This pizza is definitely not your ordinary, every-day slice of pie but what fun is ordinary anyway? You literally have the option to combine any type of vegetables that you please to this wondrous creation of fresh dough, zippy sauce, and stringy cheese. Another great thing about eating your pizza in roll-form is the lack of mess. All the good stuff is hidden within the walls of the pizza dough. Genius!

No Need to Stop at Just One “Slice”!

Okay I know– Who doesn’t love a good carb-loaded pizza? Sometimes though, you just need to cut back. Maybe you just want all the flavor with a little less guilt? When that time comes, turn to this eggplant pizza that seriously cuts carbs but still has *most* of the goodies!

The good part about this “pizza” is that you can enjoy as many slices as you want! Using a large eggplant, fresh Galbani part-skim mozzarella and plum tomatoes, you can pull off an Italian dinner with a healthy twist.

There’s Nothing Better Than Compact Pizza Bites

These type of pizza rolls are a meat lover’s paradise.  The cheesy bites are packed with hearty beef and sweet Italian sausage, for a yummy snack packed full of flavor.

This recipe makes 30 rolls in about an hour, so there is plenty to go around.  You can experiment with different toppings like green pepper or onion, as well.

No one in their right mind would ever say no to pizza.  Now throw that into a deep baked, flaky crust, and we’re practically zombies for the plate. You might think it’s to hard to make deep dish at home, but honey, it’s easy peasy!

This recipe makes about 12 servings, but it probably won’t last longer than one sitting.  That being said, if it does manage to survive, this pizza keeps as well as any others, and is just as spectacular cold, as it is warm. Try noshing on a piece for breakfast. As they say, “Cold pizza is the breakfast of champions.” Do they really say that?
