This Chicken Black Bean Taco Bake is another great Mexican-inspired recipe for those hectic midweek nights. With a few simple cheats, you can have a great-tasting dinner ready in about half an hour! The cheese lovers in your family will go wild over this one, I think. Granted, it doesn’t skimp on the meat, either. It’s a quick and easy recipe but still manages to be rather hearty and filling.

 

Though you are welcome to cook chicken on your own, the easiest thing to do for a recipe like this is to buy a nice rotisserie chicken and shred that up. It minimizes the hassle, and it’s already nicely seasoned for a savory, creamy, cheese-rich recipe such as this. I do recommend investing in a good iron skillet if you don’t have one already; they last forever (the one I have has been in the family for over 100 years and is still going strong) and are great when you need really even heating or if you need to do transfers between stove and oven, such as this.

If you want some fairly quick and easy Southern comfort food for your dinner, this Salisbury steak recipe is a good choice. It comes with a delicious gravy and yummy caramelized onions, and you can have all of it ready in an hour or less.

Think of salisbury steak as a really fancied up version of hamburger steak. (Something very similar to this was one of Mother’s midweek go-to main courses, when I was growing up, and I have continued the tradition.) You’ll often see some version of this in frozen TV dinners and the like, but don’t be fooled: None of that mass-produced, store-bought stuff can hold a candle to this.

And with such a straightforward recipe that you can complete in an hour, why settle for less than homemade?

Wow, The Crust On This Is Divine!

When I was a kid, my mother used to make the most delicious pork chops! I don’t know why, but somehow I thought they were really difficult to prepare so I never tried to make them when I grew up and moved into my own house. Of course, I was totally wrong – cooking pork chops isn’t difficult at all. Later on I started experimenting with different recipes – I was never quite happy with the result as I thought they definitely didn’t look or taste as perfect as the ones my mother made. But then I came across this recipe!

Would you believe that you can have six pork chops that look that beautiful in just half an hour?  And, being crunchy and savory on the outside and juicy and tender on the inside, these Double Crunch Pork Chops taste wonderful, too.

The Homemade Honey Garlic Sauce makes for a nice finishing touch and likely would go well on a number of other meat dishes. I have to say, it had been a while since I had pork chops with a crust anywhere close to this good, especially from a recipe that called for the pork chops to be pan-fried.  I believe that this is what we Southerners call “chicken-fried”:  get a good, solid crust on the outside that seals all the moisture and flavor inside it.  Boy, is it tasty!

The Italians know how to cook far more than just beef. There are plenty of good ways that they cook chicken, too. This One-Pan Chicken Risotto is creamy and savory, gives you about all the veggies that you could possibly want in one meal, and can be prepped and cooked in about 45 minutes.

 

Getting through the middle of the week can be a real challenge, particularly if you have a couple of school-aged mouths to feed and don’t want to scrimp on dinner but don’t have the time (or energy) to be in the kitchen all day, either.  I bring you a one-pot meal chock full of tasty and healthy vegetables that makes about eight servings super-quick, meaning that the usual family of four will have plenty of leftovers (and you will have far less to clean up).
