Want to hear something funny? Until about two months ago, I had never even heard of cassoulet. If it doesn’t ring a bell for you, either, no need to worry. It’s only the best freakin’ meal ever! I am not kidding, it really is fabulous. I’m forever grateful to my friend for letting me know this awesome dish exists!

A cassoulet is a traditional French dish that contains beans and at least one kind of meat. You won’t be able to make it in 30 minutes, so if you’re looking for a super fast meal, you may want to save this recipe for later. But I guarantee; when you make this, it’s a meal you’ll never forget!

This recipe has quickly become my favorite. I’ve already made it twice; once for my family and another time for friends that were staying overnight. Everyone loved it!

Wow Your Family With These Super Scrumptious Mini Meatloaves!

I am a huge fan of these stuffed mini meatloaves. Not just because they taste amazing, but also because it is so easy serve individual portions when you’ve got these instead of one big loaf! These also cook a lot faster than your usual meatloaf, which is always a plus if you ask me. We all know that pack of hungry wolves won’t leave us alone until there’s food on the table, right?

I like using a combination of ground beef and pork for these. In my opinion, it gives you the best flavor – but you could, of course, choose turkey for a leaner option! Another great thing about these is that you can use any kind of cheese of vegetables, or even stuff everyone’s mini loaf with their personal favorites.

I like to serve these with mashed potatoes, or sometimes with potato wedges. You know what my husband does? He grabs a couple of these with him for work, and eats them cold straight from the fridge. He says they’re delicious that way, too!

Broccoli has got to be my husband’s favorite veggie. He loves it when I try to incorporate it into any and every dish I possibly can. I have been known to toss veggies into mashed potatoes, mac and cheese and even spaghetti and meatballs. It kind of grosses me out to put it in all those different dishes where it really does not belong, but my husband? He totally loves it.

 

So, one of my new missions in life is to incorporate broccoli in any way I can. I bake it in a casserole dish with chicken as a side, I put it in my mac and cheese. I even throw some in when I make chicken fried rice. Is it my favorite? No, but I do it for him. Now, the other day I realized, I should just be making him a broccoli casserole that he would love. Nothing else in that dish, no chicken, no veggies, just a big bunch of broccoli with cheese and other seasonings. I had to make the flavor really good since broccoli tends to be bland and make the texture great. So I set out on a hunt, and did not stop until the perfect broccoli casserole dish, and this my friends, is it.

The ONLY Chicken Recipe You’ll Ever Need

Did you make any New Year’s resolutions? I didn’t – I’ve noticed I can hardly ever stick to the usual stuff that I decide to do in the beginning of each year.

I think losing weight is one of the most common resolutions, judging by the amount of people going to the gym in January! Anyway, instead of making promises to myself or anyone else in this world, I have decided it’s time to take a closer look at my dinner routines. There’s no way I’m going to start counting calories (or pounds, for that matter) but I am craving for new, fresh and healthy recipes!

I was trying to figure out what to make for dinner this week. I love chicken so that was an obvious choice, but for some reason I’ve never tried marinating it with lemon. It sounded so delicious that I decided to give it a try! Now, I know some people will say “It’s breaded! And fried! That’s not a light dish!” but I don’t completely agree. I used egg whites instead of whole eggs, and I served these with salad instead of pasta or mashed potatoes so all in all the meal was very healthy. Not to mention incredibly tasty!

One of the most versatile vegetables out there is cauliflower.  You can steam it, roast it, and cream it.  It’s truly a delicious vegetable, and when you pair it in a cheesy bake, it makes for quite the meal!

This recipe serves 6-8 people and is ready in under about hour.  There’s no need to serve a side with this, but for a little extra protein, you can sprinkle with crumbled bacon.

Fast-Making Meaty Deliciousness

Swedish Meatballs deliver a classic creamy and savory flavor and are really quick to make. I had some Swedish meatballs a few weeks ago at my usual tailgate spot, and I loved them so much, I just had to hunt down a recipe for them to share with you.

Fast-cooking recipes such as these are great for parties, tailgates, and midweek dinners. Just pair with your favorite pasta, and there you have it! These aren’t the Italian-style meatballs that most people are used to, but if you like savory and creamy sauces, you’ll really enjoy meatballs this way.

I think that you could practically drink this gravy. And yes, as the original recipe provider suggests, you may want to make a bit extra sauce if you are using broad egg noodles or something similar. This recipe is best if you have enough gravy that it can really soak into the pasta; that way, the savory flavor really takes hold, and you can make that great meaty taste stretch that much further.

Tater tots make for a nice side option for a lot of meals, but if you want something similar but healthier, or if you just want to mix things up a bit, these Zucchini Tater Tots are a good option, and you only need five ingredients (plus a bit of salt and pepper) to make them.

 

I know that it isn’t properly zucchini season anymore, but I still have a soft spot for this vegetable and like to make good use of it when I can. It will take 45 minutes max to put this together, and with a food processor, you can speed it up a lot more, as these zucchini tots only take about 18 minutes to bake. In addition to being a good, healthy side dish, they also make for great party or tailgate food and taste good even at room temperature.
