This Flavorful Meatloaf Recipe Is As Easy As It Gets

Want to hear something funny? Before we had kids, my husband was a picky eater. Well, he didn’t cringe or complain about anything I cooked, but since he can’t even tell a tiny white lie with a straight face, I always knew when he wasn’t particularly fond of the food I was serving. He especially didn’t like meatloaf, but it took me a long time to figure out that was probably my fault.

You see, as a young wife I did not have that much experience in cooking, and I was using the first recipe I happened to get my hands on. I didn’t think it was out of this world, either, but I had no idea how to make it better. Still, I wanted to serve delicious home cooked meals so I started collecting different kinds of recipes and trying them out, one by one, until I hit the jackpot.

I still haven’t found the perfect recipe for some dishes, but I certainly have found one for meatloaf! This super scrumptious one, from Lynn’s Recipes is what we call Daddy’s Favorite these days – my husband and kids are crazy about it! I’m so happy Lynn shared it in her awesome vlog.

If You Love Lemon, These Luscious Layers Will Sweep You Off Your Feet!

I was walking down the street last week, in the freezing cold wind, desperately hoping I could live somewhere else during the winter months. It’s not like I’m new to snow and ice – I’ve lived here all my life, but I just can’t seem to get used to it. I would happily move to Florida or pretty much any place where you can wear T-shirts and flip flops all year long.

To make myself feel better I decided to make the most summery dessert I could think of! Lemon delight is something we always had in the summer when I was little, although there’s no reason why it should only be considered a summer dish.

I found an awesome recipe on Crouton Crackerjacks and I thought it looked super easy, so I gave it a try. It wasn’t just easy – it was also way too yummy and I probably would have eaten half of it on my own, but my family made me share! You should go check out all of their recipes, they’ve got some really good ones!

I Wouldn’t Mind Eating This For Two Weeks In A Row!

Being the work-from-home parent in our house, I’ve decided it’s my job to plan the menu and take care of all the dinner preparations.

My husband would be more than happy to take turns, but since I personally hate grocery shopping I’m just letting him do that, instead! To me, that’s a big win! To be honest with you, ever since I got my first slow cooker, making dinner has been a breeze. I didn’t think meals would turn out as delicious in the crockpot but I was so wrong! Some of them turn out even better than their stovetop counterparts, and I guess that’s because they get to slowly cook to perfection, for hours.

This recipe from the Slow Cooker/Crockpot YouTube channel is one of my favorites. I had made Salisbury steak a hundred times before, but never in the crockpot. Once I tried this recipe, there was no going back. I’m so glad I came across their video, you should check it out, too!

Bring Out The Cast Iron And Make Biscuits Like Your Grandma Used To

I can’t remember the first time I ever had biscuits, but I bet it was one of those times my grandmother was babysitting and made them for us. She used to make skillet biscuits and they were tastier than you could ever imagine. It didn’t really matter what time of day it was; for breakfast she served them with jam, for dinner she made some yummy sausage gravy to go with these.

My mother made biscuits, too, but I can’t remember a single time she would have made them in a skillet. A couple of years ago I was feeling nostalgic so I took out my cast iron skillet and started looking for recipes.

I found this old recipe in one of my worn out cookbooks and it looked really scrumptious so I gave it a go! I was right; the biscuits turned out fluffy and flavorful, and this is pretty much the only way I’ve made them ever since.

I have to warn you, though. It’s really hard to stop eating these until the skillet is totally empty!

I Call These The 3 Layers Of Happiness

I’ve got a real treat for you today! Actually, it was my sister who first made these super delicious looking dessert bars so I guess I should give her credit for that. I could almost taste them just by looking at the picture she sent me! Of course, I couldn’t wait until the next special occasion to make these… I had to get the ingredients that same day and whip up a batch immediately!

These pecan cheesecake squares are made of three layers, all equally delicious. I would happily eat any of these layers on their own if that was possible! But since they are combined so perfectly in this recipe, I do not mind enjoying them all in one bite.

I intend to make these for the next church potluck; it’s always gets crowded there so I need a dessert that is easy to double, or even triple, and also super simple to serve. Not to mention, absolutely scrumptious! I would never want to compromise on flavor and with this recipe, you certainly don’t need to.

Would You Pick One Or Make a Combination Of All 3 Of Them?

It’s always the same thing for me when it comes to holiday meals.

I start planning really early, to make sure there is no last minute panic. But then I simply find way too many great recipes and I start rethinking my choices. After about 3 weeks of hopping back and forth between ten different recipes, my husband picks one for me. I know, it’s sad!

But this year I don’t have to rethink anything. This sweet potato casserole recipe that I found on Recipes For Our Daily Bread is brilliant. Basically, you get an awesome sweet potato casserole with three topping options in one! We all have that favorite topping we like better than others, so now you can make something for everyone.

I actually can’t believe I hadn’t thought of this myself. This is great for anyone like me, who are having a hard time deciding what to serve at Christmas dinner!

Make Ahead And Get Some More ZZZZ In The Morning!

The holidays are my favorite time of year. I love everything about it; the cooler weather, the family gatherings, the last minute shopping trips. But most of all, I love the food and cooking hearty meals for my extended family. Unfortunately, it’s not very often these days that we get to spend time with our favorite cousins, aunts and uncles. So I cherish every moment!

Which is why I like simple dishes that can be prepared ahead, so that I can focus on being with my family but still serve them a really good meal. This country breakfast casserole is a great example.

Eight ingredients is all you need, and a quick 15 minutes to prepare. I like to make this the night before and then just throw it in the oven in the morning. Our guests will wake up to the delicious smell of this casserole baking in the oven, and all you need to do is pour yourself and them a big cup of coffee. How does that sound for Christmas morning?
