The ONLY Chicken Recipe You’ll Ever Need

Did you make any New Year’s resolutions? I didn’t – I’ve noticed I can hardly ever stick to the usual stuff that I decide to do in the beginning of each year.

I think losing weight is one of the most common resolutions, judging by the amount of people going to the gym in January! Anyway, instead of making promises to myself or anyone else in this world, I have decided it’s time to take a closer look at my dinner routines. There’s no way I’m going to start counting calories (or pounds, for that matter) but I am craving for new, fresh and healthy recipes!

I was trying to figure out what to make for dinner this week. I love chicken so that was an obvious choice, but for some reason I’ve never tried marinating it with lemon. It sounded so delicious that I decided to give it a try! Now, I know some people will say “It’s breaded! And fried! That’s not a light dish!” but I don’t completely agree. I used egg whites instead of whole eggs, and I served these with salad instead of pasta or mashed potatoes so all in all the meal was very healthy. Not to mention incredibly tasty!

Chinese food is one of my favorite things to eat. I absolutely love it! However, I don’t love the price of taking 5 people to the local buffet as it can get kind of pricey. So, what should I do? Why, make my own Asian-inspired feast right from my kitchen, of course!

I was so excited to come across this recipe for the 3-ingredient orange chicken sauce. If you don’t have a great sauce, your whole Chinese meal can go right down the tubes. This sauce is so good and very easy to make.

Quick Tip: To make the sauce less sugary, opt to use sugar-free marmalade.

How To Get That Crispy Crust Without The Guilt Of Grease

Who doesn’t love fried chicken? Except for the fattening factor, no-one seems to like that! Well, now you can eat it without the guilt – this easy baked recipe has just as much crisp as the fried version. No need to worry about the calories! These are so much healthier – and just as tasty!

This is such a simple recipe and it’s very easy to alter it to your liking. If you like milder chicken, leave out the cayenne and use milder mustard. On the other hand, if you want your chicken to have more kick in it, add more chili and red pepper flakes!

This recipe makes about 8 servings and is ready in under an hour.  It’s the perfect way to enjoy the crunch of fried chicken, without all the fat.
