Are you into all the glory of the BLT sandwich? Do you enjoy noshing on crispy bacon, juicy tomatoes, and crisp lettuce sandwiched between two slices of perfectly browned toast? Yep, me too. However, if you’re like me, you also try to watch your carbohydrate intake. That means that we sometimes have to skip out on the bread altogether, or significantly lower or intake. Boo!

Don’t worry; there is a wonderful substitute for the BLT sandwich that still tastes amazingly good. It’s the BLT salad. Fresh veggies, smoky bacon, and a BLT-inspired sauce all nestled in a bowl of protein-rich paradise sounds like my kind of lunch!

Okay I know– Who doesn’t love a good carb-loaded pizza? Sometimes though, you just need to cut back. Maybe you just want all the flavor with a little less guilt? When that time comes, turn to this eggplant pizza that seriously cuts carbs but still has *most* of the goodies!

The good part about this “pizza” is that you can enjoy as many slices as you want! Using a large eggplant, fresh Galbani part-skim mozzarella and plum tomatoes, you can pull off an Italian dinner with a healthy twist.

Looking for a super simple dinner…and fast?! This one has it all. Grilled chicken that’s marinated in a homemade balsamic marinade makes one juicy and flavorful meat!

Place that protein under the broiler topped with fresh mozzarella and tomato and watch that cheese melt. Drizzle some balsamic vinegar over top and dinner is served…wasn’t that easy?! For a low carb meal serve it with a side salad and veggies. If counting carbs isn’t your thing, opt for rice or pasta. This will be your new go-to meal when dinner time is quickly approaching!

It’s so nice to find a colorful and delicious spin on your usual pork chop dinner. These Jalapeno Smothered Pork Chops are sure to wow you and your family (or other cookout guests).  The recipe as written is for the grill, but it is readily adaptable to the oven, if you prefer. No need to get outside in the chilly fall weather just to make this delicious dish!

 

I love a good pork chop… grilled, fried, baked, whatever.  Sometimes, the same-old, same-old gets a bit boring, though.  Well, this recipe certainly isn’t boring.  It also looks beautiful when you’re serving it – and come on, bacon AND cheese?  How could I have passed this up?  This was bound to become our new family favorite, and I’m sure your family will feel the same way!
