Okay I know– Who doesn’t love a good carb-loaded pizza? Sometimes though, you just need to cut back. Maybe you just want all the flavor with a little less guilt? When that time comes, turn to this eggplant pizza that seriously cuts carbs but still has *most* of the goodies!

The good part about this “pizza” is that you can enjoy as many slices as you want! Using a large eggplant, fresh Galbani part-skim mozzarella and plum tomatoes, you can pull off an Italian dinner with a healthy twist.

Cauliflower Catches a Casserole in This Inventive Dish!

When you think of cauliflower, you generally do not think of casserole, in the same vein.  But cooking is all about inventing new flavors and ideas that inspire and delight us!  This cauliflower is baked deep in a cheesy, creamy casserole, with flavors to die for!

This recipe is super healthy, and ready in under two hours.  It serves about 4 people, and should be served immediately.  Now remember, just because something is roasted and cheesy, doesn’t mean it’s a light delight!

Rock Your Breakfast (Or Tailgate) With Vegetarian Awesome

Hey, I am a meat eater.  But I also love my veggies, and I like having a good go-to option that will satisfy me and my vegetarian friends (I have a few).  This fits the bill for a quiet home meal or a bustling event (though you may need to tweak the recipe a bit if you have strict vegans on the guest list).

 

I have a bit of a confession to make: I skip breakfast a lot. When I do eat that meal, I often want something fairly light: enough to settle my stomach a bit and give me a little energy but not enough to bog me down. This casserole is perfect for that. And though it is a breakfast dish, it also works well as part of a nice picnic lunch, when you want something flavorful but don’t want to be feasting on anything too rich while lounging in the sun.
