ANYONE Can Make This Awesome Salsa Recipe!

I love game nights. Not only because that’s when a bunch of our greatest friends gather together with all of our kids to have a good time and enjoy the game, but also because it turns into such a tasty potluck party! You know, we all bring something really tasty and something that’s easy to eat while watching the game. Usually it’s all about snacks, appetizers and dips – the kids love that stuff and it’s so much easier for us parents than cooking a huge meal for such a large crowd.

We try to change things up a little every time, so that we wouldn’t get bored of the same old appetizers. Mini meatballs are awesome, but not if you’re having them all the time!

Last week it was my turn to bring some kind of a dipping sauce for the gathering. I was so busy all week that I honestly didn’t have the time to check out a fab new recipe, let alone go pick up some special ingredients. So when the night came, I was exhausted, and I wish I didn’t have to bring anything at all.

When fall turns to winter, it always kind of scares me a little. The weather can get pretty cold where I live, and I’m more of a fan of summer heatwaves. But I have to admit there is at least one thing I really enjoy about the coldness, and winter in general. The first time I heard about Enchiladas was when I was about 8 or 9. I have four aunts, and they and my Mom used to have monthly dinners at each other’s houses. I just happened to be nearby (nope, I wasn’t snatching cookies from the tray on the table) when I heard one of them use the phrase, “the whole enchilada” in a hearty conversation with her sisters. Since I was still a kid back then, my first thought was it was some sort of word that meant “entourage”. Yes, I am talking about the “the whole entourage” phrase.

 

It wasn’t until in high school that I learned what the word truly meant—enchilada was food. It was also just then that I learned that the creamy chicken dish that the same aunt always brought to reunions was actually called enchiladas.

Have you got your garden planted yet? I finally got my seedlings going by the window in my home. Soon, they’ll be transplanted to the outdoor garden. i cannot wait for bushels upon bushels of fresh produce. Do you know what I do with all of that produce? I make salsa!

 

Nothing beats garden fresh salsa that tastes like it came from your favorite restaurant. Not tooting my own horn, but I believe my salsa tastes better than any you can buy at the store. Red, ripe tomatoes, crisp onions, and bright bell peppers all intermingling together in a bowl to make a wonderful dip for your tortilla chips. Yum! Cornbread comes to Taco Tuesday, in this truly inspired dish!

I always like to experiment with new flavors, and this knocked the socks off my family, let me tell you!

These are even more amazing with a dollop of guacamole and sour cream, if that’s your thing.

After all, ya gotta do-it-up!  You only live once!

If spicy is too much for you, then you can lay off the jalapenos and chilies.

I can hardly wait to make this again, and experiment with the flavors.

You can truly mess around with this one, and in my opinion, these waffles are good anytime of the day!

This recipe takes about 30 minutes to make and serves up to 4 people, and it’s as easy as pie!

The wonderful thing about this recipe is that you don’t have to add a Spanish flare.  It can be virtually anything.

The cornbread waffles are great even by themselves!

When it’s morning and your sleepy head is trying to come up with breakfast ideas, why not roll everything up into one? With a little pop of jalapeno, this dish has a spicy kick. You can, obviously, omit them if spice is not your thing.  This is an easy way to dress up breakfast and takes the same amount of time as cooking everything in a pan.

 

This is such a fun way of making breakfast! If you’re having overnight guests, this dish is sure to wow them in the morning! Why make your regular eggs and bacon if you can serve them in such a creative way? With the help of tin foil this isn’t a difficult dish to prepare, and you can add ingredients and seasonings as you wish. Diced bell peppers and onions would make a nice addition! And if you’re lucky enough to have leftovers, they will make a delicious lunch later on.

Twice-Baked Sweet Goodness!

Two of these could about make a full meal by themselves, and one makes for a very good side.  These Twice-Baked Jalapeño Sweet Potatoes are loaded with flavor and healthy goodness. And don’t worry – the spiciness is not overwhelming and easily adjustable.

 

I have read plenty about how good sweet potatoes are for you:  good fiber and complex carbs, much lower glycemic index than “regular” potatoes, antioxidants, Vitamin A, etc. And I have come to love their flavor, though I must admit that I was a bit slow to warm up to them as a kid.  Part of the problem is, I think, that there just aren’t enough good and creative recipes out there for sweet potatoes or at least not enough well-known ones. Well, you’ll want to save this one.
