If you want something with a little Mexican or Tex-Mex flavor that is tasty but a bit outside the usual options, this Slow Cooker Chicken Enchilada Casserole is a good choice. It’s also really easy to put together.

 

Is this “traditional”? Well, no, I don’t think you can call it that, but I do like the flavor, and sometimes, you have to be a bit creative and go in a non-traditional direction to keep things interesting and get out of a food rut. And I know that some traditionalists may frown a bit on the “dash of this, can of that” style of cooking, but it is a quick and easy way to mix things up a bit and make a hearty meal. Suffice it to say that I will be breaking out my Crock-Pot for this again.

This Chipotle Chicken Nacho Casserole is loaded with savory Tex-Mex flavor.  Do the fairly straightforward prep in advance, and you can have this filling, savory dish cooked in about twenty minutes – quick enough for an easy lunch or hectic weeknight meal. I have to hand it to Rachel Ray; she really knows how to throw down in the kitchen! I love the idea of turning that colorful Mexican-inspired cuisine into an easy casserole. With recipes like this, there’s no need for the middle of the week to turn into a “food dead zone.”

 

If you are concerned about the spiciness of this recipe, just go light on the extra jalapeños or leave them out entirely.  There is plenty enough other seasoning here to do without the additional heat if you are more the type that puts up with the spicy heat than enjoys it. Cooking the chipotle in olive oil with the herbs and other spices for a few minutes before baking it softens its heat, as well. And the cheese blend draws all of the flavors together rather nicely. As-is, the recipe serves four people.

A Casserole That Will Satisfy Even the Toughest of Cowboys

As the name suggests, this John Wayne Casserole delivers the classic flavor of the American West with little hassle or beating around the bush.  After 20 minutes of basic prep, just put everything in your slow cooker and leave it alone until it’s ready. I bet John Wayne himself could have handled it!

 

It really is hard to beat a Crock-Pot for convenience… just toss everything in, go about your day, and then you have a nice meal waiting for you when you get back home.  It’s perfect for making nice, filling casseroles.  And I have always been drawn to Western and Tex-Mex cuisine by its generous use of cheese and herbs to make savory and filling meat dishes without too much hassle. This one is a keeper for sure!
