You’ve Been Doing It Wrong All These Years!

I am a big fan of pizza and all of its variations. I’ve tried every single pizza place in our town – ok, not only our town but pretty much every town I’ve ever visited, haha! For such a long time it was a mystery to me how they were able to make their pizzas so delicious. I couldn’t understand why my homemade pizza didn’t turn out that way, even when I was using the same toppings and trying my best to imitate the crust as well. I must have gone through dozens of recipes, and I was getting desperate.

It’s not that I didn’t think my homemade pizza was good – they all turned out very tasty and we certainly never had any leftovers! But still, something was missing and I couldn’t let it go until I found out what it was. I swear, my husband thought I was going crazy when I spent so many hours trying to figure it out…

All that work paid off eventually and I now know what it takes to make the best (in my opinion) pizza on the planet! And it’s not difficult at all!

I made these burgers at our last BBQ, and let me tell you, they were a HUGE hit! In fact, my husband had to make a run to the store to fetch more patties because we ran out and our guests demanded more Hawaiian Hula Burgers!

How to whip up a healthy salad you can be proud of.

Have you ever craved something sweet but you aren’t interested in cakes, cookies, pies, or candy? I know when this happens to me I all about shock myself as I’m a junk food junkie. However, sometimes a big old bowl of fruit salad really hits the spot.

This recipe isn’t for your ordinary fruit salad as it contains two very specials ingredients: honey and lime.

The honey kicks the sweet factor up a bit, and the lime adds a touch of tantalizing tartness. This fruit salad is perfect for taking to summer picnics, BBQs, and family get-togethers.  It’s easy to throw together and looks like a rainbow in a  bowl. What can be better than that?

This Crockpot Hawaiian Chicken is perfect for people who want a low-hassle meal and like their meat on the sweet side. It features a sticky-sweet sauce, with the natural mild acidity of the pineapple and mandarin oranges giving it just the right amount of tartness to put the sweet and savory flavors in balance. I have to say, the Hawaiians do know how to blend the Asian and American cooking traditions nicely. I was more than happy to break out my Crock-Pot again to give this a try. And with no pre-cooking even required, this recipe is about as easy as it gets.

 

For easier cleanup, spray down your slow cooker with some cooking spray or use a liner. You can tweak the sauce in this recipe a bit according to taste. The simplest way to serve this chicken is as shown, on a bed of rice of your choice. I happen to think that jasmine rice goes beautifully with this! That is likely more than enough for a full meal for most people, but if you want some sides, I would recommend some simply cooked carrots and a green vegetable of your choice for a bit of contrast.

If you like tropical flavors, such as pineapple and coconut, you’ll love this Coconut Preacher Cake. For something with such flavor and such a nice blend of textures, it’s amazingly simple to throw together. I have made this several times since I found the recipe – and it never fails!

 

The story I’ve heard is, the preacher cake got its name because it was something that you could whip up in a jiffy with ingredients on hand when you found out at the last minute that the preacher was coming over to visit. (Your well-meaning but absent-minded spouse forgot to tell you until the last minute, I’m guessing). In any event, I can see how this would be a harried homemaker’s go-to dessert: it’s moist and sweet, it has a nice mix of textures – and seriously, is there anything you can’t do with a simple cream cheese frosting? I call it a quick, easy, yummy win!

Meet the beautiful and so lovely Pineapple Upside Down Cupcake!  It has all of the sweet, fruity deliciousness of that classic, full-sized Southern cake, only in more convenient, individual servings. And though it is easy enough to bake for an everyday family treat, it will also be well received at most any gathering.

 

I remember eating plenty of pineapple upside down cake as a child when I would visit Grandmother in Hazlehurst, Mississippi.  It’s so easy to make, even though you’re technically baking a cake from scratch, and it has a flavor loved by people young and old (and in between) alike.  She never made it into cupcakes, though.  It is such a clever idea and it brings a touch of fresh air to this classic, yet delicious recipe.
