Just like its sibling, the pineapple upside down cake, this Caramel Apple Upside Down cake is loaded with sweet, fruity flavor, only this recipe has more of the spicy comfort of fall than the tastes of summer. I happen to like a good upside down cake, regardless of the exact flavor. I think that this is perfectly suited for autumn and the holiday season, however. There’s nothing like the soothing comfort of caramel and the crisper, slightly acidic sweetness of apple to warm you up during the cooler months..yummy!

This Apple Cinnamon Upside Down Cake is great for special occasions, particularly holiday meals, but it’s a straightforward enough recipe to make for a weekend family treat.

 

Weather cooling off means that I have started thinking about desserts with apples or pears and generous amounts of cinnamon. A lot of people automatically go for the apple pie option, and there’s nothing wrong with that, but that apple cinnamon flavor works wonderfully well in a cake, too!

Meet the beautiful and so lovely Pineapple Upside Down Cupcake!  It has all of the sweet, fruity deliciousness of that classic, full-sized Southern cake, only in more convenient, individual servings. And though it is easy enough to bake for an everyday family treat, it will also be well received at most any gathering.

 

I remember eating plenty of pineapple upside down cake as a child when I would visit Grandmother in Hazlehurst, Mississippi.  It’s so easy to make, even though you’re technically baking a cake from scratch, and it has a flavor loved by people young and old (and in between) alike.  She never made it into cupcakes, though.  It is such a clever idea and it brings a touch of fresh air to this classic, yet delicious recipe.

I can remember my Grandmother in Mississippi making a pineapple upside down cake at least once a week when I was down there visiting. It’s one of my fondest childhood memories and I can clearly remember the taste of that delicious cake. When I ran into this recipe, it reminded me of those times and I just had to try it. I’m so glad I did! I was always a fan of how moist the upside down cakes are, and this one is no exception. It is unique because it uses apples and blackberries instead of pineapple, and it also calls for real honey, which I think gives it the real homemade flavor.

I think this will go in your recipe box after you try it – it definitely went to mine. I can hardly wait to make this again! I know exactly when I am going to make this delicious southern dessert and it will be for my church’s monthly potluck supper. I just everyone there will absolutely love this concoction of sweetness. I cannot wait to see my friends and family’s faces when they eat this dessert. Enjoy!
