Bring Back The Vacay Mood Without Even Leaving Your Kitchen!

I remember when I first landed on the beautiful island of Maui and stepped out of the airplane with my husband. All those exotic scents and flavors lingering in the air when we walked in the airport lobby… I knew immediately that this was a place I would have to return to, some day. You could feel the aloha, and that’s something I haven’t been able to explain clearly to anyone.

It was and still is the best vacation ever; the people were amazing and friendly, the weather was incredible, and the food! Oh yes, the food was to die for. I soon lost count of how many restaurants we tried, every one of them better than the last one. Whatever you wanted to eat, they had just the right place for it!

I often feel like bringing back those memories and flavors so I’ve collected a bunch of Hawaiian style recipes. This Hawaiian chicken is one of my favorites; it’s super easy to make, and it’s absolutely mouthwatering.

Chicken is a favorite of many people. But sometimes it can get a little boring. This dish will take care of that and have them doing a Hula dance once it hits their lips.

You can almost picture yourself sitting on a beach in Hawaii enjoying this with your favorite person on a late evening date. In fact, if my husband and I ever make it to a tropical destination, I’m going to bring my slow cooker along so I can make this simple, 3-ingredient chicken dinner! That’s right, only 3 ingredients!!!

 

This Hawaiian style chicken dish uses just 3 simple ingredients and is so versatile. It cooks in your slow cooker in just 3 to 4 hours. You can use any kind of BBQ sauce you like to give it your own distinctive flavor and touch. It will quickly become one of your favorite dishes when you are pressed for time. And as they say in Hawaii, Mai e `ai. This means come and eat, my friend. Well, don’t mind if I do 🙂

My little ones really enjoyed this chicken because of the sweetness. I substituted the brown sugar for a stevia baking blend that I have on hand but it didn’t taste as good as the brown sugar version.

My family could detect that I used stevia instead of sugar, too. They grumbled and complained about it but I told them that at least their glycemic index wasn’t being impacted LOL They weren’t amused. If I were you, I’d go the brown sugar route for this recipe.

This Crockpot Hawaiian Chicken is perfect for people who want a low-hassle meal and like their meat on the sweet side. It features a sticky-sweet sauce, with the natural mild acidity of the pineapple and mandarin oranges giving it just the right amount of tartness to put the sweet and savory flavors in balance. I have to say, the Hawaiians do know how to blend the Asian and American cooking traditions nicely. I was more than happy to break out my Crock-Pot again to give this a try. And with no pre-cooking even required, this recipe is about as easy as it gets.

 

For easier cleanup, spray down your slow cooker with some cooking spray or use a liner. You can tweak the sauce in this recipe a bit according to taste. The simplest way to serve this chicken is as shown, on a bed of rice of your choice. I happen to think that jasmine rice goes beautifully with this! That is likely more than enough for a full meal for most people, but if you want some sides, I would recommend some simply cooked carrots and a green vegetable of your choice for a bit of contrast.
