The sooner you make this casserole the better!

If the pizza casserole is a nice taste of southern Italy, this Parmesan Chicken is a nice, easy-to-make taste of northern Italy. It’s a satisfying recipe, with only six ingredients (including the seasoning) and a 9″ x 13″ baking dish needed to put it together.

On top of it all, you can have it ready in under an hour! Now, that’s what I call the perfect weeknight meal – especially if you are trying to balance work, kids, school, chores, and still want to serve your family a hearty meal.

If you want something easy to make, with a decent amount of cheese (but not TOO much) and with a creamy sauce, give this chicken parmesan casserole a try. Dicing up the chicken may be a little bit of work, but it really shortens the baking time, and everything after that is super-simple and low-hassle. You’ll have no trouble putting this together even at the end of a rather hectic midweek day.

The delicious lasagna that most people know comes with a generous helping of meat, but with all the yummy zucchini and cheese flavors, you won’t miss the meat when you have these Three-Cheese Zucchini Lasagna Rolls.  They’re also rather easy to put together. These asparagus fries are crazy good for as healthy as they are! I had never realized you could cook asparagus this way until I ran into this recipe. I had my doubts and I almost decided not to try these. I’m so glad I changed my mind! I am going to start making these often because it’s really hard to find ways to prepare vegetables that my family will enjoy with a good appetite. I could eat all the veggies in the world so I have no idea where they got it from!

I have a confession to make. Usually when I am preparing chicken cordon blue for my family it is pre-made from the butcher counter at my local grocery store. I know… sometimes I have felt guilty for taking such a shortcut but I’ve been so afraid of how much work it would mean to do it all by myself!

 

But when I saw how easy this recipe was I had to try it. It’s ridiculous! I never thought I could end up with such a delicious meal without having to slave in the kitchen. I increased the amount of cheese that it calls for because in my experience you lose a lot while cooking. And you can never have too much cheese, right?

I thought they turned out better than the pre-made ones I normally use and the chicken was juicier and tender. Now I can’t wait to make these again!

Ok, I know some of you are saying “Really, seafood lasagna?” But it is so delicious you might never go back to traditional lasagna again! Surprise your family with this tasty dinner and they will be wondering how on Earth you managed to hide a professional chef in the kitchen!

 

I have to admit I did not use imitation crab meat. I bought the real thing and I upped the quantity of it to be equal with the shrimp – one pound each and I doubled the cheese as well. Because, you know, you can never go wrong with double cheese, can you?

I know what my family and I like so I often spice up recipes a little. You can try this one as it is (you won’t be disappointed) or you can change it a bit to your liking.
